Bra Day #1: too much to describe but all amazing, from trad microproducers to world renowned behemoths & from all around the world. Been a while between posts but have been using downtime well visiting lovely cheese shops os. First up in Dresden, over 145 years old & one of the prettiest cheese shops I’ve set foot in. Took home some local German cheeses, including Bergkäse, a raw milk Camembert-style, a ‘bierkäse’ (beer cheese) & a mild washed. Next up a Dutch gouda specialist. Added to our table a Lausitzer specialty - locally made quark mixed with natural linseed oil; nutty, creamy & different. Further south, stumbled across Kaslöchl Salzburg, a literal hole in the wall ramming in over 60 cheeses from Austria & beyond - a gorgeous reminder that great things can come in small packages.

Very excited to be joining for the September food tour of Northern Italy. Stage One is sold out but there are still a couple of spots for Stage Two, which includes a guided tour of the famous biannual Slow Food Cheese festival in Bra. Fully organised food, accommodation, guides and more, this will be an absolute cracker. Link in bio if this sounds like your thing. I know it’s mine!

There are a lot of things I’ll miss but few things I’ll miss more than an uncracked wheel of cheddar. Good segue to thanking all the incredible Aus cheesemakers who have made my job a joy for a decade, some (but thankfully not all) of whom are also choosing other paths: , , .goat.cheese, , , , , , , , , , among so, so many that I’ve forgotten right now. So easy to love Aussie cheese
