By piercing blue vein cheeses more air is allowed into the cheese to facilitate the the growth of the blue mould (yes the Scientist me is still here). There are fancy pieces of equipment that you can buy to pierce the cheese but I find a knitting needle does the same job, admittedly slower. But slow is what cheese is all about. You cannot rush a cheese.
