Lamb shoulder on the bone

Ask us to prepare your lamb ready for ragù.

Ingredients (Serves 4–6)

1.5–2 kg lamb shoulder or neck, cut into chunks
2 tbsp olive oil
1 onion, finely diced
2 carrots, finely diced
2 celery stalks, finely diced
4 cloves garlic, crushed
2 tbsp tomato paste
1 cup red wine
2 × 400 g crushed tomatoes
1 cup beef or lamb stock
2 bay leaves
2 sprigs rosemary
2 sprigs thyme
Salt and cracked black pepper

Method
1. Season lamb well with salt and pepper.
2. Brown lamb in hot oil until well coloured. Remove.
3. Cook onion, carrot and celery 8–10 minutes until soft.
4. Add garlic and tomato paste. Cook 1–2 minutes.
5. Deglaze with red wine and reduce by half.
6. Return lamb, add tomatoes, stock and herbs.
7. Cover and cook:
• Oven: 160°C for 3–4 hours
• Stovetop: very low for 3–4 hours
• Slow cooker: LOW for 6–8 hours
8. Shred lamb, discard bones and excess fat.
9. Simmer uncovered 20–30 minutes to thicken
