Mustard microgreens are a favorite with their spicy taste combined with a delicate and fresh texture. The mustard microgreen is a good source of vitamin A, C and E, dietary fiber, folate, niacin, riboflavin, thiamin, sodium, potassium, calcium, copper, iron, magnesium, manganese and zinc and contain an even higher concentration of these nutrients compared to their mature counterparts.
