Why Long-Fermented Sourdough?
One of the reasons I choose long fermentation is because research suggests it may offer nutritional & functional advantages over many quickly fermented breads.
Potential benefits include:
🦠 May produce a lower glycemic response in some studies.
🌾 Reduced phytic acid, which can improve the availability of minerals like iron, zinc, & magnesium.
⏳ Partial breakdown of gluten & carbohydrates during fermentation.
💚 May be easier for some people to digest (though everyone’s experience is different).
🍞 Naturally produced organic acids help extend freshness, reducing the need for preservatives.
🧪 Richer flavor, aroma, & keeping quality from the fermentation process.
🧬 A living culture of wild yeasts & beneficial lactic acid bacteria working together over time.
A few important facts:
❌ Sourdough is not gluten-free (unless made with gluten-free ingredients).
❌ It’s not a cure for digestive or health conditions.
❌ Not every sourdough loaf is the same—the ingredients, fermentation time, & baking process all matter.
For me, long fermentation isn’t about chasing trends.
It’s about honoring a time-tested process that develops flavor, transforms the dough, & creates the kind of bread I love sharing with my community.
