Cowside Suppers 2026 reservations open today, 5/25/26 at 11am!

This is the 9th season of our popular farm to table meals, which center on the cheese, meat and produce from here at , supplemented with other local foods.

Held in the Hay Loft, they are limited to 20 guests and are offered June to October. It’s white cloth service meets cow bells- rustic elegance.

We are a dairy farm in Waldoboro, Maine. We make award winning cheese, regenerative agriculture, and raise pork, beef and veal.

Two changes this year. We’re hired Chef Alexandra Ellis, owner of , to cook for the entire season.

Second, we’ve added lunch on the first Sunday of the month. Dinner will still be the third Sunday of the month.

Last year, the whole season sold out in 6 hours, so we hope lunch will help relieve that pressure.

These are special events that happen around our regular farming duties- we will break off in the evenings to go milk cows!

Nettle Pesto with Lakin’s Gorges Opus 42 Cheese
I recently learned that the ratio to produce good pesto is : 1 part nuts, 2 parts oil, 2 parts cheese, 8 parts greens.
Knowing a ratio like this opens up the possibility for nearly endless variations. You can try different nuts and seeds like sunflower seeds, hazelnuts or pepitas. Try different oils, traditional olive oil or maybe grape seed oil. Different aged cheeses like Lakin’s Gorges Cheese Morgan, Opus 42, or Cascadilla Bleu. A firmer, higher salt content cheese works well. Soft cheeses do not.
Opus 42 is an aged cow’s milk cheese that is semi firm, slightly sharp, nutty and buttery- in other words, the perfect cheese.
Greens can be basil, fennel fronds, spinach, chard, parsley - in this case- STINGING NETTLES.

Back to that ratio. For this preparation I used
¼ cup sunflower seeds, unsalted
½ cup olive oil
½ cup Lakin’s Gorges Opus 42, grated
4 ounces fresh nettles (wear gloves, blanch in boiling water 1-2 minutes. Plunge into ice water)
I made this in the food processor, so first added the blanched nettles and pulsed until mostly smooth. Then added the sunflower seeds and pulsed until smooth. Same with the cheese (make sure you keep scraping down the sides of the bowl.) Finally, let the processor run while streaming in the oil until it is all smooth.
You can also do this the traditional way with a mortar and pestle and there are those who argue that pesto doesn’t taste right if it wasn’t crushed by hand.
Pesto will oxidize and turn brown very quickly, so store it either covered with a close fitting lid or float some more oil over the top, or cover it in contact with cling wrap. Use within a few days, or freeze to add to soups and stews in the winter.
How do you use fresh pesto? Stir into cooked pasta. Use as a sandwich spread. Incorporate into a savory baked bread. Top grilled vegetables or eggs. Pair with cheese… you get the idea.

People always ask me which is the favorite of my cheeses. In terms of taste, I’ll devour them all with glee.

In terms of true love- it’s the Opus 42; which continues to be my most popular cheese.

I call it the crowd pleaser. It’s sharp, nutty and buttery. If ever there was a cheese born to pair with apples, this is the one. I also really enjoy it with curried dried chick peas or honey. It makes a spectacular grilled cheese, or incorporate some into a pie crust. Pair it with a saison, cider, or a rosé.

After making it for 15 years, I think it’s the best it’s ever been between improving the nutrition of our cows to produce amazingly flavorful milk, to figuring out how to age it longer than 3 months to produce more complex flavor- and occasional tyrosine crystals! It’s the new, longer aged version that won a Silver Medal at the World Cheese Awards last fall.

I love to think about where this cheese gets to travel. Next week, it’s going all over the country in the subscription box!
