Nettle Pesto with Lakin’s Gorges Opus 42 Cheese
I recently learned that the ratio to produce good pesto is : 1 part nuts, 2 parts oil, 2 parts cheese, 8 parts greens.
Knowing a ratio like this opens up the possibility for nearly endless variations. You can try different nuts and seeds like sunflower seeds, hazelnuts or pepitas. Try different oils, traditional olive oil or maybe grape seed oil. Different aged cheeses like Lakin’s Gorges Cheese Morgan, Opus 42, or Cascadilla Bleu. A firmer, higher salt content cheese works well. Soft cheeses do not.
Opus 42 is an aged cow’s milk cheese that is semi firm, slightly sharp, nutty and buttery- in other words, the perfect cheese.
Greens can be basil, fennel fronds, spinach, chard, parsley - in this case- STINGING NETTLES.
Back to that ratio. For this preparation I used
¼ cup sunflower seeds, unsalted
½ cup olive oil
½ cup Lakin’s Gorges Opus 42, grated
4 ounces fresh nettles (wear gloves, blanch in boiling water 1-2 minutes. Plunge into ice water)
I made this in the food processor, so first added the blanched nettles and pulsed until mostly smooth. Then added the sunflower seeds and pulsed until smooth. Same with the cheese (make sure you keep scraping down the sides of the bowl.) Finally, let the processor run while streaming in the oil until it is all smooth.
You can also do this the traditional way with a mortar and pestle and there are those who argue that pesto doesn’t taste right if it wasn’t crushed by hand.
Pesto will oxidize and turn brown very quickly, so store it either covered with a close fitting lid or float some more oil over the top, or cover it in contact with cling wrap. Use within a few days, or freeze to add to soups and stews in the winter.
How do you use fresh pesto? Stir into cooked pasta. Use as a sandwich spread. Incorporate into a savory baked bread. Top grilled vegetables or eggs. Pair with cheese… you get the idea.
