North Iowa Produce Inc. We are a USDA certified poultry processing plant located in Stacyville, Iowa. In January of 2010 they began to search for a sight to build.

In late 2009, two founders of North Iowa Produce were informed that Wapsie Produce in Decorah, Iowa was closing. Wapsie Produce was the only large purchaser, processor, and marketer of Capons in the United States. The two individuals had been raising Capons for Wapsie’s holiday bird market for over twenty years. With next year’s cockerel order already contracted with the hatchery another plant to

purchase their Capons needed to be found. Unfortunately the nearest plant with the ability to process their large specialty birds was located three hundred miles away in Ashby, Minnesota. Partnering with two other friends they decided to build a USDA certified poultry processing plant that could process and market Capons. In April a piece of ground was purchased and excavation started immediately. In July of 2010, only three months after breaking ground, the plant opened and began processing birds upon the USDA’s approval.

Larger than a chicken, a little smaller than a turkey, but with more flavor and moisture than either, the capon is a French and Italian holiday favorite.

Remember your food thermometer when cooking that Thanksgiving capon or turkey tomorrow! Poultry needs to be cooked until it reaches an internal temperature of 165 degrees to prevent foodborne illness.
