Thanks to state healthy food incentive funds through the Colorado Department of Public Health and Environment , Colorado WIC and a state contribution of healthy food incentive funds, LiveWell Colorado was able to directly purchase close to $500,000 of weekly produce boxes (June-October) from Colorado farmers this summer. These produce boxes were provided to participants in the WIC and Older Adult Congregate Meal Programs in 23 different county programs.

From one of our partners: ”While food insecurity impacts 1 in 10 older adults in Colorado, the number is even higher in Pitkin County where the high cost of living can consume much or all of the income from one's Social Security, leaving less money available to purchase food. The LiveWell CSA program has allowed more than 50 older adults to receive fresh produce each week for the entire summer. Our members are very appreciative of the program." -Samuel Landercasper, Pitkin County Economic Assistance Department

Follow us for any length of time, and you're going to figure out, we LOVE food. Salsa is one of our favorites to make and to share, and the fact that we have *most* everything at the market makes this one of the freshest salsas around!
This recipe makes a TON of salsa, so be ready to share with your neighbors or at your next fiesta! Olé!

Starting Line-Up
**Please note: everything needs to be finely diced so that you get a little with every bite!!**
3 or 4 bell peppers (different colors for good looks!)
8 heirloom tomatoes (we usually use Cherokee purple)
4 Beefsteak tomatoes
1 large purple onion
1 bunch cilantro
2-4 unseeded jalapeños, to desired heat
4 ears sweet corn, kernels only OR 1 or 2 cans whole kernel, low-sodium sweet corn
Juice and pulp of 4 limes
2 cans black beans, rinsed
1/4 cup hot sauce (we use Valentino's)
1 & 1/2 cup white vinegar
1/4 cup sugar sometimes less (optional, to cut acidity)
All to taste: Salt, pepper, cumin (we go heaviest on cumin), chili powder, garlic powder, crushed red pepper flakes

Play-By-Play
1. Get ready to make a mess.
2. Dice all your veggies. Mix them in a *large* bowl or trough if you happen to have one of those just lying around.
3. Add sweet corn, black beans, lime juice and pulp, hot sauce, vinegar, and sugar.
4. Add spices to taste.
5. Let salsa chill for a day in your fridge.
6. Make yourself a margarita. Invite your very best friends over and tell them to bring chips.
7. Enjoy!

This recipe can also be modified to make cabbage salsa. Instead of using so many tomatoes, substitute in a head or two of cabbage. Purple cabbage is pretty but will bleed its color into the salsa. For cabbage salsa, you only need 1 or 2 tomatoes.

LiveWell Colorado chefs Jess & Fez attended the Food Bank of the Rockies mobile food distribution on June 11th! They hosted a drive-by cooking demo highlighting a colorful, simple summer salad using products commonly received through FBR's food boxes. Safely distanced in their cars, attendees learned how to make a 'No Recipe Needed Bean Salad' as they drove up to accept their meal boxes.

Located in the Aurora Mall parking lot, families drove past multiple organizations giving out flyers and free swag during the June 11th distribution event. "Families appreciated the idea and said they would try it later at home," says Fez about their 4 step summer salad showcase.
