Prepare Delicious Loaded Potato Skins:
Use a fork to pierce the potatoes in several places. Place them on a baking sheet and bake until tender, 55 to 65 minutes. Let the potatoes cool until they are easy enough to handle. Cut the potatoes in half lengthwise, then use a spoon to scoop out each potato half, leaving about ¼ inch of potato on the shell.

Meanwhile, transfer scooped potato flesh to a bowl, then mash with garlic, plant milk, mustard, and nutritional yeast (if using). Add chickpeas and coarsely mash with the mixture. Add the shallots, capers, sun-dried tomatoes, and scallions to the potato-chickpea mixture. Mix well, then season with salt and pepper to taste.

Fill the potato skins with the mixture and bake until golden, 10 to 20 minutes. Meanwhile, make the tahini sauce: Whisk the tahini and lime juice with about ¼ cup of water. Serve potatoes warm or at room temperature drizzled with tahini sauce and topped with chives and scallions.

These mini pizzas are great for parties:

Preheat the oven to 400°F. Line a baking sheet with parchment paper. Combine the onions, zucchini, and bell peppers in a skillet and sauté over medium heat, stirring frequently, for about 10 minutes or until the onions start to turn golden brown. Add water 1 to 2 tablespoons at a time as needed, to keep the vegetables from sticking to the pan.

Place the pitas on the prepared baking sheet and bake for 5 minutes. Combine the beans, nutritional yeast, garlic, vinegar, and ¼ cup water in a food processor. Puree until smooth. Add pepper flakes; mix well, then season with salt and pepper to taste. Set aside. Remove the baking sheet from the oven and flip the pitas over. Spread 2 tablespoons of marinara sauce over each pita. Dot the pitas with spoonfuls of the bean spread. Layer the vegetables on top. Sprinkle with some basil and bake for 20 minutes. Remove from the heat. Slice into quarters and serve warm.

To make the ricotta, combine all ingredients in a food processor and process until fairly smooth. Place into a large bowl, and set aside. To make the spinach, steam at least 1 pound of fresh spinach (2 if you really like spinach) for about a minute or two, just until slightly wilted. Drain well, then either mix the spinach into the ricotta or layer the spinach over it when assembling the lasagna.

Preheat the oven to 350°F. To assemble the lasagna, spread 1 cup of the pasta sauce over the bottom of the baking dish. Then cover the sauce with a layer of noodles. Next, spread half of the ricotta mixture (and half of the spinach if not mixed into the ricotta) over the noodles, and top with 2 more cups of the sauce.

Add another layer of noodles, the rest of the tofu mixture (and spinach if separate), 2 cups more of the sauce, and the rest of the noodles. Spoon the remaining 2 cups of sauce over the noodles (make sure you cover all the edges), and sprinkle some parmesan over the top. Cover with parchment paper and then with foil. Bake for 60 minutes. Remove from the oven and let rest for 30 minutes before cutting.

This recipe uses a lot of fresh herbs, but you can make it with dried herbs instead. Use only half the quantity for dried herbs as indicated for the fresh herbs.

Add the potatoes to a saucepot and fill with enough water to cover the potatoes. Bring to a boil and cook on medium-high heat, covered, for 20 minutes until the potatoes are tender when poked with a fork. In the meanwhile, place the broth, marjoram, thyme, rosemary, onion flakes, and garlic powder in a saucepan. Mix well and let stand until the potatoes are ready.

Drain the potatoes and run under cold water until cool enough to handle. Cut them lengthwise into halves. Bring the broth to a boil, add the potatoes, stir well, and cook for about 5 minutes on medium-high heat, stirring occasionally, until the broth is absorbed by the potatoes. Sprinkle with salt, pepper, and chives and serve warm.
