I know I know….another one? Yep it’s another new one 😀. I enjoy going to different markets to spark inspiration and find new flavors to create something you wouldnt normally stumble upon on a big box store shelf. The Honey Hibiscus is definitely that, it’s a sweet and tart sauce with just enough heat lingering to remind you it’s still a hot sauce.

We used a batch of 1 month fermented Orange Habanero and Manzano peppers for the heat. Normally we do a 2-3 week Lacto ferment but with a longer break than normal we are able to take our fermentation longer. The longer fermentation takes the heat level down and brings the natural sweet flavor of the Habanero out. This really helped us to balance with the hibiscus and honey and to not over power.

🔥 level is a 3 out 10.
I think the first dish I will try the Hibiscus honey on will be a smoked pork loin.

We’ve got the Pique blended up and bottled. It turned out excellent. Typically Pique wouldnt be blended, but this was the best way for us to bottle and store.
The Pique does have more of a vinegar base than our fermented sauces but the brown sugar, garlic, chipotle jalapeno and coriander flavors melded together well to really make this sauce pop.
The Pique gives me a “spicy carolina style barbecue” type vibe.
