🍄 Small mushroom. Incredible survival trick!

Take a closer look at the delicate folds and fuzzy white edges in this photo! Meet the split gill mushroom (Schizophyllum commune).

Its name comes from the tiny splits along its gills. In dry weather, those edges curl inward to protect the spore-producing surfaces. When moisture returns, they reopen—ready to release spores again! 🌧️

This little wood-decaying mushroom also helps recycle wood, returning nutrients to the ecosystem. Nature’s cleanup crew at work! 🌳♻️

🍄 Keep your gourmet mushrooms fresher for longer!
Fresh mushrooms store best when they can breathe. After bringing them home:
✅ Refrigerate promptly
✅ Store them in a paper bag or our Midwest Mushrooms vented package
✅ Wait to clean them until you’re ready to cook
✅ Use a soft brush or lightly dampened towel when cleaning is necessary
Avoid airtight storage where condensation can collect. Less trapped moisture helps preserve the mushrooms’ texture and quality.
Storage time varies by variety and freshness, so check your mushrooms regularly and enjoy them while they’re at their best.

🍄 WHY DO OYSTER MUSHROOMS GROW IN CLUSTERS?

Unlike plants, mushrooms don’t grow from roots. The cluster you see is produced by a larger network of mycelium living throughout its food source.

When moisture, fresh air, temperature and light are favorable, that network forms many tiny mushroom “pins” close together. Those pins expand into the overlapping caps we recognize as an oyster mushroom cluster.

Oyster mushrooms near the bottom of a cluster may develop longer stems as they reach around neighboring caps toward fresh air and open space.

One connected network. One impressive harvest.

🍄 You can choose only one—which is going in your skillet?

1️⃣ KING BLUE OYSTER
Meaty, savory and substantial. A great choice for steaks, sandwiches and hearty entrĂŠes.

2️⃣ LION’S MANE
Tender and mild with a delicate texture that works beautifully in crab-cake-style recipes, pasta and simple butter sautĂŠs.

3️⃣ CHESTNUT
Nutty, pleasantly crisp and excellent roasted or added to stir-fries, eggs and Italian.

There’s no wrong answer—but there can be only one today!

Comment 1, 2 or 3, along with your favorite mushroom dish!
