Microgreens in the wild.

I love when my customers send me pictures of their food. At markets I always ask how folks are using them, and people share with enthusiasm. Knowing someone was just so delighted by their meal that they had to send a photo, or two, along with the ingredients list …that’s next level.

What’s for on the menu this time? An egg poached in scallion olive oil, avocado, all on bread w/ Comte cheese, and Shindig’s Leek Microgreens. As told my by customer, “I just can’t help myself.” And why would he?

Start your morning right!

I always recommend adding microgreens to your morning routine. By starting the day with a handful of microgreens you are getting a kickstart to your recommended daily intake of vegetables.

Leek microgreens are a delicious addition to an egg sandwich, avocado toast, an omelette or a bagel with cream cheese.

They are closely related to garlic, onions, shallots, and scallions, and their nutrient profile contains over 80 nutrients! You’ll be getting Vitamin A, Vitamin B6, Vitamin C, Vitamin E, Vitamin K, Potassium, Vitamin B6, Manganese, Magnesium, Folate, Riboflavin, Copper, Iron, Potassium, Fiber, and Omega-3 Fatty Acids. A combination of vitamins and minerals that science has shown to have major health benefits if consumed daily.

Starting your day with microgreens is great for your taste buds and your health.

A super quick anytime of day meal. This is a version of one of my go-to healthy meals. It’s filling, fresh, has lots of texture, “good” fats, complex carbs, greenery…all the stuff. The never fail formula is inspired by the constructing of a Japanese rice bowl with 5 key layers: the base, a protein, a fresh topping, sauce, and texture.

When I think about “what’s for dinner?”, or breakfast, or lunch, but don’t feel like cooking, this can be ready in 10-15 mins with minimal effort.

THE BASE:
Coconut brown rice heated up from a batch of rice I made earlier this week just for occasions like this

PROTIEN:
Smoked salmon slices
Sautéed garbanzo beans

TOPPED w/ FRESH microgreens:
Leek
Cilantro
Sunflower (great crunch!)

TEXTURE:
Whole wheat toast

SAUCE:
A drizzle of olive oil on microgreens
Garlic cream cheese on the toast

I also added a sprinkle of freeze-dried broccoli microgreens on the toast for an extra boost of nutrition and additional umami flavor.

Today this was breakfast.

Connecting with folks at markets is one of the highlights of running Shindig.

Entrepreneurship can be a lonely journey but having regulars who bring smiles, introduce me to their kids, spouses and families, and share words of encouragement make the journey so fulfilling. People not only tell me about why they love microgreens, but also how much they enjoy sharing my microgreens with their loved ones. What I do, growing tiny veggies and herbs, has become an integral part of people’s lives.

The curiosity of those unfamiliar with microgreens to the excitement of folks who’ve been using them for years, and are looking for a new way to enjoy them, creates glorious conversations that spur all of our imaginations.

I hear about what people love and how they connect with the world around them. Sometimes we just appreciate a warm sunny day. These chats, spliced into a regular grocery shopping trip, truly uplift my spirit.

Imagine being a part of someone’s life in a way that nourishes their bodies and their daily experiences. What a gift. Thank you.

China Rose Radish. A radish by any other name is not as sweet.

What’s not to love with the China Rose? In addition to making any dish more beautiful, this radish adds a delicious, slightly sweet, radish flavor and has a milder spice than other radish microgreens.

Those gorgeous pink stems and green leaves are also packed with vitamins A, B, C, E, & K and other nutrients like folic acid, niacin, potassium, iron, phosphorus, pantothenic acid, calcium, magnesium, zinc, carotenes.

These all help in the prevention or treatment of health issues like supporting digestion, improving the immune system and promoting healthy skin.

I’ll be adding them to fish tacos, rice bows, and salads.

This is what happens when the farmers market shows out.

Sourdough, avocado, a perfectly fried egg, peak-season asparagus— and a handful of Shindig wasabi microgreens to finish it off.

Wasabi microgreens bring a peppery heat that builds as you eat. Not overpowering, but just enough to cut through the richness of the egg and avocado and gives the whole plate a boost.

A simply delicious lunch for these unseasonably warm days.

Who doesn’t love a good stir fry? Fresh veggies in the fridge but not a ton of energy to cook a complicated meal. Problem solved.

Today’s bowl:

✅Broccoli, orange bell pepper, and sugar snap peas fresh from the farmer’s market
✅Costco Chicken sausage ( always has our back)
✅Coconut rice – made with coconut milk and chicken stock instead of water
✨Finished with Shindig’s cilantro microgreens

Cilantro microgreens add that bright cilantro flavor, but they’re also more concentrated in beneficial plant compounds and antioxidants than the mature herb. A small handful goes a long way for both flavor and nutrition.

I ❤️ DAIKON MICROGREENS!

My current favorite microgreen is daikon radish. After a long obsession with pickled daikon and carrots, a common side on many Korean, Vietnamese and Japanese meals, I have found a new way to enjoy daikon radish. MICROGREENS, of course.

Full of flavor, they have a peppery kick and a slightly sweet spiciness that elevates any meal.

And, like other radish micros they are a nutritional powerhouse.

* Rich in vitamins A, C, E, and K daikon micros are also a good source of calcium, magnesium, phosphorus, potassium, and zinc.
* They are a great source of antioxidants which help combat oxidative stress and inflammation.
* They contain significant dietary fiber making them beneficial for digestive health.
* Their pungent flavor comes from compounds that have been shown to have anti-inflammatory and anti-cancer properties.

Stir fries, soups and noodle dishes will be even more delicious with daikon micros on top. Add the to rice bowls and hand rolls for extra crunch and flavor. Or pair them with your favorite banh mi sandwich along side the traditional pickled carrots and daikon.

Black History Month is a time to celebrate, learn, and connect. To honor the month, as one of Black farmers who sell in their markets, the .center interviewed me in their newsletter. I am a proud, Black woman urban farmer. The opportunities, lessons and challenges are different from those farming larger plots of land. Nonetheless I am honored to be able to grow food and provide something extraordinarily nutritious to my community.

Thanks to the Ecology Center for the chance to talk about my work, why I love farmers markets, and to share resources for folks to continue learning about and supporting Black farmers.
