A traditional English trifle is a type of dessert that’s similar to a deconstructed cake layered with fruits, cream, pudding, or any other kind of sweets. For this summer trifle, we’re using lemon shortbread and oatcakes rather than cake, and filling out the layers with a mix of creamy mascarpone, strawberry rhubarb jam, lemon jam, lemon juice, and fresh strawberries and rhubarb to create a bright, fruit-forward dessert treat with a touch of citrus that’s ideal for birthday parties and summer celebrations. Name: Rafael Gomez ⁣

About: Guatemalan-American raised in Georgia, grew up working on cars and helping out in the kitchen. Self taught home chef, I draw inspiration for my cooking from my travels in my early 20's. I also try to keep my carbon footprint in mind by shopping locally, sustainably and in season.⁣

Location: Athens, Ga. ⁣

Favorite cheese: This one is a hard one. But I really like goat cheese. It reminds me of queso fresco which is a cheese I grew up with as a child. It has a little bit of a tang and I can add it into several dishes. ⁣

Favorite cheesy recipe: I'm split between being indulgent and going the mac and cheese route or some homemade ricotta and spinach tortellini with a pecorino butter sauce.⁣

What do you love about food and cooking?: I'm Latino so our food is an easy way to allow others to experience our culture and where we come from. It also lets me show people a little of what I've experienced by letting me use different techniques I have learned from my travels. One day I'm making tacos, the next I'm making tortellini and the day after that I'm making Korean fried chicken.⁣

What inspired you to help small businesses with your upcoming project?: Growing up within a Latino dominated community I saw how we knew that our next door neighbor was growing vegetables so we bought their excess. We knew people within the community who cooked on the weekends so instead of ordering out we bought food from them and ate it on their back porch. So to answer the question, I don't see it as helping them, its just what I grew up with, its second nature.

The deep, beeswax yellow paste crunches and the floral, fruity flavors, tending to the concentration and prickle of canned pineapple, are unanimously beloved. Inspired by Beaufort, reinterpreted in Wisconsin and blowing cheese minds for nearly a decade. It’s so good you can pair it with anything, but we’re partial to filberts and aged Rioja.

FYI - the package I paid to have here via FedEx Priority Overnight is not yet delivered as of right now (after 1:30 pm local time). I am on the phone with FedEx, who have informed me that their guarantees for delivery times have been suspended due to Covid. So, had I paid for the Standard Overnight, I would have gotten my package at the same time. They are essentially not holding their contractual obligations. They also indicated, as I forced them to show me where that is in writing (the suspended guarantees) because it feels like a "bait-and-switch", that they have failed to provide this information on their website for customers to see. So, please ensure your customers know that they might pay for something that that FedEx has no intention of providing. Thank you.
