His wonderful brother tragically lost his wife to a deadly blood clot at just thirty years of age, leaving behind two beautiful young daughters. How to Make...
Homemade Strawberry Jelly

- 1 LB fresh strawberries
- white sugar
- 2 tsp* powdered gelatin

1) trim the tops off of each strawberry. Slice in half, or in quarters for large berries, and set aside.

2) with a digital kitchen scale, weigh your berries in a medium saucepan. In my case, my berries weighed 343g after trimming.

3) sprinkle in 10% sugar (in this case, 34g). Toss to combine and place the pot on medium-low heat.

4) stir strawberries and sugar occasionally until they begin to bubble. Once bubbling, turn heat down to low and let the fruit simmer until it begins to breakdown (see progressive pictures for an example).

5) once the fruit is broken down, whisk in the gelatin until well combined and dissolved. The mixture should thick enough to coat a wooden spoon and hold it's shape (again, see picture). Remove pot from heat.

6) for a more rustic and chunky jelly, transfer as is into a heat-proof dish and allow to chill 2 hours up to overnight. For a smooth jelly, blend with an immersion blender and pass through a fine-mesh strainer before chilling (mine was blended and strained).

This recipe makes about 1 Cup of jelly and can be made with any berry of your choice in the same proportions.

* for a looser, jam-like consistency, cut the gelatin down to 1 tsp. I sometimes do this as a substitute for pectin when making jam.

"I cannot stress how highly I recommend Crescendough Cakes to make your perfectly customized wedding cake! At our initial meeting, after getting to know our personalities a bit and asking us what we like and don't like, she followed up with a meeting to taste sample cupcakes and see a draft of the cake design. What I loved about Crescendough Cakes is her openness and eagerness for our honest feedback. We told her what we liked about the tasting and what we wanted to change for the final cake. The end product was exactly what we wanted!

Flavors:
We had a 3-tier cake. The bottom layer was this incredibly moist banana cake with cream cheese frosting. The middle layer was DELICIOUS black sesame cake with white chocolate mousse frosting. This was a huge hit at the wedding! The black sesame was unexpected to most guests but because I love black sesame ice cream, I really wanted it and she nailed the flavor. And then our top layer.... Crescendough Cakes must have done this over and over until they reached perfection because my now husband was asking for a very unique flavor! They were able to somehow make a crema concoction that tasted just like his favorite artificial melon flavor (melona). We were so impressed! And finally, the sheet cake for guests was coffee cake with nutella because I'm obsessed with both. My ONLY regret is that I didn't even get to try a slice of that cake!! They were gone before I could even blink. But if the moistness and flavor balance was anything like the other layers, I'm satisfied.

Decor:
We opted for the fondant because it just looks nice and clean. Ellen is a pro at making flowers from icing and I swear it must have taken months to make all of them! They looked gorgeous. And the best part were the cake toppers! She customized a bride bear and groom raven for us since I'm from Chicago and he's from Baltimore, hence we are Bears and Ravens fans. It was perfect for us and I'm glad it put a fun twist to the cake.

All in all, for a person who doesn't get very excited about dessert, I absolutely loved our wedding cake. We saved the top tier in the freezer but have already eaten half of it. :)

Wedding cake tasting could not have gone any better today! Today the lovely bride and groom tasted chocolate cupcakes filled with dark chocolate mousse topped with salted caramel buttercream, vanilla cupcakes with vanilla pastry cream and coconut buttercream, "blue velvet" cupcakes with cream cheese buttercream, and chocolate cupcakes with chocolate pastry cream and mocha buttercream. 😊
