La Isla del Encanto. Warm tropical breezes, the sounds of Salsa in the air, the smell of pernil cooking in your mother's oven. The gentle swaying motion of the hammock under the shade of a palm tree. These are the memories that will fill your thoughts and spirit as you enjoy this traditionally made coquito. I have memories of my Abuelita (grandmother) making a batch of coquito for Las Navidades (Christmas) as we all enjoyed a sip or two. The consistency is smooth, sweet, with a hint of coco, spice and just enough Puerto Rican rum to warm the heart and soul.
We can all remember wonderful moments during the holidays with family and friends. The sights and sounds that trigger the feelings of warmth and affection that bring us instantly home, when we all felt free to live and love. Enjoy my coquito made with that in mind, sharing those moments which unify us all, family. Genaro Hernandez
