Recipe (yield 4-6 individual cups)
4 large egg yolks
4 tablespoons sugar
2 cups heavy cream
8 ounces bittersweet chocolate (70%), melted
1 teaspoon vanilla extract (optional)

1. In a medium saucepan, whisk together egg yolks, 2 tablespoons sugar, and 3/4 cup heavy cream.
Cook over medium-low heat, stirring, until mixture coats back of a wooden spoon, 3 to 4 minutes (do not boil).
Remove from heat; whisk in melted chocolate and vanilla.
Strain into a bowl; chill until cool.

2. With an electric mixer, beat remaining 1 1/4 cups heavy cream with remaining 2 tablespoons sugar until stiff peaks form.
Stir 1/3 of whipped cream into cooled custard mixture, then gently fold in the rest with a rubber spatula.

3. Spoon into serving dishes; chill, covered overnight. Bring to room temperature before serving.

For the Brownies:
350 gr dark chocolate (60%) cut into pieces
200 gr butter
4 eggs
1.5 cups sugar
1 TBSP instant coffee
4 TBSP milk
1 3/4 cups all-purpose flour
1/4 tsp salt

For the Cream cheese mixture:
150 gr cream cheese
30 gr butter, softend
1/4 cup sugar
1 egge
1 TBSP flour
50 gr white chocolate, shaved

Directions:
1. Preheat oven to 350° F (180° C).
2. Melt the dark chocolate and butter on a bain marie and set aside to cool.
3. whisk the eggs and sugar in a freestanding electric mixer (or use a handheld electric whisk) until the mixture is light and fluffy. Add the chocolate mixture and whisk for one more minute.
4. Add instante coffee, milk, flour and salt. Mix well until everything is combined.
5. Pour the mixture into a 27X30 baking pan coated with cooking spray; set aside.
6. Whisk the cream cheese and butter, add the sugar, egge, flour and white chocolate. Whisk until all the ingredients are incoporated.
7. Drop by rounded tablespoonfuls over the batter; cut through batter with a knife to swirl.
8.Bake about 40-45 minutes or until set and edges pull away from sides of pan. Cool on a wire rack.
