🍓🍋 These Strawberry Lemon Cupcakes have been my go-to summer bake for the last couple months! I first made them when I had extra strawberries from the farmer’s market and a can of strawberry soda in the fridge — now my kids ask for them every weekend. The bright pink color and that perfect sweet-tart lemon kick in every bite is pure sunshine. Super moist, no-fuss, and they always disappear fast.
What I use:
• 1 box Betty Crocker Super Moist white cake mix
• 1 cup strawberry soda (or lemonade)
• 1 packet strawberry Kool-Aid or Jell-O
• ⅓ cup vegetable oil
• 3 large eggs
• ½ cup butter, softened
• 4 cups powdered sugar
• 2 tbsp fresh lemon juice + zest
• Fresh strawberries for topping
Quick method I follow every time:
Mix the cake mix, strawberry soda, Kool-Aid, oil, and eggs until smooth. Bake at 350°F for 18-22 minutes in lined muffin tins. For the frosting, beat butter with powdered sugar, lemon juice, and a little strawberry puree until fluffy and pink. Pipe onto cooled cupcakes and top each with a fresh strawberry slice and lemon zest.
These are always a huge hit at potlucks and make me look like I spent way more time than I actually did! 🌞
