🍓🍋 These Strawberry Lemon Cupcakes have been my go-to summer bake for the last couple months! I first made them when I had extra strawberries from the farmer’s market and a can of strawberry soda in the fridge — now my kids ask for them every weekend. The bright pink color and that perfect sweet-tart lemon kick in every bite is pure sunshine. Super moist, no-fuss, and they always disappear fast.

What I use:
• 1 box Betty Crocker Super Moist white cake mix
• 1 cup strawberry soda (or lemonade)
• 1 packet strawberry Kool-Aid or Jell-O
• ⅓ cup vegetable oil
• 3 large eggs
• ½ cup butter, softened
• 4 cups powdered sugar
• 2 tbsp fresh lemon juice + zest
• Fresh strawberries for topping

Quick method I follow every time:

Mix the cake mix, strawberry soda, Kool-Aid, oil, and eggs until smooth. Bake at 350°F for 18-22 minutes in lined muffin tins. For the frosting, beat butter with powdered sugar, lemon juice, and a little strawberry puree until fluffy and pink. Pipe onto cooled cupcakes and top each with a fresh strawberry slice and lemon zest.

These are always a huge hit at potlucks and make me look like I spent way more time than I actually did! 🌞

🍌 Gooey Banana Chocolate Chip Muffins 🍫

Classic comfort food — ultra-moist banana flavor packed with melty chocolate chips. Every kid (and adult!) loves these!

Ingredients (makes 12 muffins)
🥣 2 cups all-purpose flour
🍬 ¾ cup brown sugar
🧂 2 tsp baking powder + ½ tsp salt
🥚 2 large eggs
🍌 3 ripe mashed bananas (about 1½ cups)
🥛 ⅓ cup milk or Greek yogurt
🛢️ ⅓ cup melted butter or oil
🍫 1 cup semi-sweet chocolate chips (plus extra for topping)

Instructions

1️⃣ Preheat oven to 375°F (190°C) 🔥

2️⃣ Whisk dry ingredients in one bowl. Mash bananas and mix with wet ingredients in another.

3️⃣ Combine gently, then fold in chocolate chips 🍫

4️⃣ Scoop into lined muffin tin (sprinkle extra chips on top).

5️⃣ Bake 18–22 minutes until golden and a toothpick comes out clean 🌟

Sweet, juicy peaches piled high on soft Tw***ies with fluffy Cool Whip — the easiest summer dessert that tastes like peach cobbler in minutes!

Ingredients (makes 8–10 shortcakes)

🍰 1 box Hostess Vanilla Tw***ies (or mix with chocolate)
🍨 1 tub Cool Whip, thawed
🍑 2–3 cups fresh sliced peaches (or canned in juice, drained)
🍯 2 tbsp peach preserves or light caramel drizzle (optional)

Instructions

Ingredients:
• 1 cup Great Value granulated sugar

• 4 cups purified water

Ingredients:

• 1 can Cinnabon or refrigerated cinnamon roll dough (or 1 pkg puff pastry/crescent sheets)
• 2 cups fresh raspberries 🍇
• ½ cup granulated sugar
• ½ cup light brown sugar
• 2 tbsp cinnamon
• 1 tub cream cheese frosting (or homemade)

Quick Instructions:

1. Preheat oven to 350°F 🔥

Ingredients:

• 1 box Hostess Tw***ies
• 8 oz Philadelphia cream cheese, softened 🧀
• 8 oz Cool Whip, thawed
• 12–15 Oreo cookies, crushed (plus extra for topping)
• ½ cup powdered sugar
• Chocolate syrup for drizzling 🥮

Quick Instructions:

• 2 cans Pillsbury Grands! Flaky Layers biscuits
• 1 can strawberry pie filling 🍓
• 8 oz Philadelphia cream cheese, softened 🧀
• ½ cup powdered sugar
• 1–2 tbsp milk
• 1 tsp vanilla extract

Instructions:

1. Preheat oven to 375°F 🔥

2. Mix cream cheese, ¼ cup powdered sugar & vanilla until smooth.

3. Flatten each biscuit slightly, add cream cheese + strawberry filling in center, pinch edges.

4. Bake 12-15 mins until golden.

5. Whisk remaining powdered sugar + milk for glaze & drizzle while warm.
