Some cuts of pork deserve a permanent place on the menu. This one definitely earned it!

Our first time cooking Iberico Pork Presa from B7 Ibericos, and I can already tell you this is a cut we'd love to see our processor offer.

The presa is incredibly tender, beautifully marbled, and packed with flavor. Honestly, it was one of those meals that makes you stop and appreciate what a special cut of meat can bring to the table.

Here's how we prepared it:

🔥 Grilled over direct heat for 2 minutes per side.
🔥 Moved to indirect heat for approximately 8 minutes.
🔥 Rested for 8 minutes before slicing into thick pieces.

We topped it with homemade red chimichurri made with one red bell pepper, fresh ingredients, and red w**e vinegar instead of the traditional sherry vinegar. Finished with fresh green onions.

The combination was fantastic. The richness of the Iberico pork paired beautifully with the brightness of the red chimichurri.

B7 Ibericos , you've got our attention!

This first experience definitely has us thinking about adding pork presa to our future processing cut list. Sometimes discovering a new cut is just as exciting as raising the animals themselves.

Forget haunted houses… try feeding a flock of hungry turkeys!

😂 I put their feed in the trough before letting them out, and suddenly it turned into a scene straight out of a horror movie. I barely made it inside the coop and shut the door before the killer turkeys came after me! Happy Halloween from Holland Legacy Farms! 🎃🦃

🌱 Two New Seeds. One Goal: A Healthier Pasture.

This week, two new additions arrived at Holland Legacy Farms: chicory from Hancock Seed and Boston plantain from Albert Lea Seed House. And no, we're not growing a salad garden! We're looking at ways to improve our pasture for our Blackhead Dorper sheep.

🌿 Why chicory?

Chicory develops a deep taproot that can help cycle nutrients through the soil while contributing organic matter. It also provides nutritious leafy forage for sheep and can tolerate some drought once established. Research has even explored its potential role in managing certain internal parasites in grazing sheep, although it isn't a replacement for proper parasite control.

🌱 Why Boston plantain?

Boston plantain adds another broadleaf forage to the mix. Its branched taproot and nutritious leaves offer a different growth pattern and feeding option from conventional pasture grasses. It can also contribute to forage diversity and may perform well under some dry conditions.

🐑 What's the benefit for our sheep?

Our goal is to provide a more diverse selection of forage while building a pasture that better supports our flock. Different plants offer different nutritional characteristics, and a well-managed, diverse pasture can give our sheep more grazing options.

🌾 Can these seeds extend our fall grazing season?

Potentially, over time. Once established, these plants could contribute to our rotational grazing program and help diversify our forage throughout the growing season. However, we're planting in late October, so establishment and meaningful fall growth aren't guaranteed—especially for Boston plantain, which is generally recommended for spring planting.

For us, this is about more than planting seeds. It's about investing in our soil, improving our pasture, and being intentional about how we raise our animals.

We'll be watching closely to see how these plants perform in our North Texas conditions.

One of our favorite parts of farmers markets isn't just selling what we raise. It's the PEOPLE! 💚🐑

We've had so many customers discover Holland Legacy Farms through TikTok, Facebook, and Instagram, and we absolutely LOVE when those online connections turn into real-life conversations at our booth!

But today was extra special. 🥹💕 Some of our oldest, dearest friends came out just to hang with us and experience firsthand what we've been building. Having them there meant more than they know!
