What if chicken actually tasted like... chicken?
These are our 9-week-old American Bresse, and they're entering one of the most exciting stages of their journey.
Unlike commercial broilers bred to reach market weight in just a few weeks, American Bresse are a heritage breed that's given the gift of time. Time to forage. Time to mature. Time to develop the rich flavor that made this breed famous.
Over the next several weeks, we'll slowly transition them to cracked corn, rolled oats, and eventually finish them with fresh raw milk from a local dairy. This traditional finishing method isn't about making them biggerβit's about developing exceptional eating quality.
As these birds mature, they naturally lay down fine intramuscular fat, known as marbling. Combined with a carefully managed finishing diet, that marbling creates meat that's juicy, tender, and full of deep, rich chicken flavor. The skin becomes beautifully crisp, the meat stays moist, and every bite reminds you what chicken tasted like before speed became the priority.
This is the bird that chefs seek out.
It's the chicken you roast for Sunday dinner, serve to family on special occasions, or proudly place in front of guests knowing they'll ask, "Where did you get this chicken?"
Not every bird you see here will end up on someone's dinner table.
Several will become the next generation of our breeding flock. One of our biggest goals this year is expanding our American Bresse program so we can offer more hatching eggs to families who want to raise this incredible breed while also keeping freezers stocked with truly exceptional poultry for our community.
