Easy Pork Birria Recipe
Season & Sear:
Season ~2 lbs of cubed pork shoulder with salt, pepper, and a dash of cumin.
Brown the pork in a hot pot or Dutch oven to lock in flavor.
Blend the Sauce:
In a blender, combine 2–3 dried chiles (ancho or guajillo), 1 chopped tomato, 2 garlic cloves, ½ onion, a pinch of oregano, and about 1 cup of broth or water.
Blend until smooth.
Simmer:
Pour the sauce over the seared pork and add ~2 cups of broth.
Let it simmer on low for 2–3 hours (or until the pork shreds easily).
Season with additional salt, pepper, or spices to taste.
Assemble the Tacos:
Dip Mr. Tortilla 1 net carb tortillas into the birria broth.
Place on a hot skillet, add the shredded pork, and sprinkle with cheese if desired.
Fold and cook until both sides are crispy.
Serve & Enjoy:
Serve with a side of the broth for dipping.
Top with onions, cilantro, and a squeeze of lime.
