WHAT’S YOUR FAVORITE VEGGIE TO TOSS IN?

Spring Rainbow Veggie Pasta Primavera

Ingredients:
12 oz rotini or fusilli pasta

½ cup cherry tomatoes, halved

1 small zucchini, chopped

½ cup broccoli florets

½ cup green peas (frozen or fresh)

½ cup red or yellow bell pepper, chopped

¼ cup grated Parmesan

2 tbsp olive oil

1 garlic clove, minced

Salt, black pepper, fresh basil or parsley

Directions:
Boil pasta in salted water. Add broccoli & peas in last 2–3 min. Drain.

In a large skillet, heat olive oil. Sauté garlic and all chopped veggies 5–6 min.

Add cooked pasta to skillet, toss well with veggies and Parmesan.

Season to taste and finish with herbs and more cheese.

Asparagus Pasta with Garlic & Parmesan
Ingredients:
8 oz rigatoni or penne

1 bunch asparagus, trimmed & cut into 1.5” pieces

2 tbsp olive oil

3 garlic cloves, minced

¼ cup grated Parmesan

Salt & black pepper, to taste

Optional: lemon zest, red chili flakes

Directions:
Cook pasta until al dente. Reserve ½ cup pasta water.

While pasta cooks, sauté garlic in olive oil (1–2 minutes). Add asparagus, season with salt & pepper, and sauté until just tender (about 4–5 minutes).

Toss cooked pasta with asparagus, add Parmesan and a splash of pasta water to coat.

Finish with extra Parmesan, pepper, and lemon zest if using.

Thin-sliced zucchini swimming in garlicky chili herb oil… like antipasto went to Italy and never came back.

Ingredients:

2–3 small zucchinis, thinly sliced into rounds

1–2 cloves garlic, minced

2 tbsp sun-dried tomatoes, finely chopped (in oil or rehydrated)

1 small red chili or ½ tsp chili flakes (adjust to heat)

3 tbsp olive oil

1 tbsp fresh basil, finely chopped (plus extra leaves for garnish)

1 tsp fresh or dried oregano

Salt & black pepper, to taste

1 tsp lemon zest (optional, for brightness)

1 tsp balsamic vinegar or red wine vinegar (optional for tang)

🔪 Directions:
Slice the zucchini very thinly using a knife or mandoline. Arrange in overlapping layers on a shallow plate.

In a skillet, heat olive oil over medium. Add garlic, chili, and sun-dried tomatoes. Sauté 1–2 minutes, just until fragrant (don’t burn the garlic).

Stir in basil, oregano, lemon zest, and vinegar (if using). Season with salt and pepper.

Pour the warm mixture evenly over the zucchini slices.

Let sit for at least 30 minutes to 1 hour at room temperature, or refrigerate for up to 1 day for deeper flavor.

Garnish with fresh basil leaves before serving. Great as an appetizer, side dish, or light summer snack!

WHIPPED CREAM OR VANILLA ICE CREAM ON TOP?

Ingredients:
2 ½ cups sliced fresh rhubarb

2 cups halved fresh strawberries

¾ cup sugar

3 tbsp cornstarch

1 tsp lemon juice

¼ tsp cinnamon

1 double pie crust (store-bought or homemade)

1 egg (for egg wash)

Sugar for sprinkling

Directions:
Preheat oven to 425°F (220°C).

Toss strawberries, rhubarb, sugar, cornstarch, lemon juice, and cinnamon.

Roll out bottom crust in pie plate. Add filling.

Top with second crust or lattice. Seal edges and cut vents if using full crust.

Brush with egg wash and sprinkle sugar.

Bake 15 min at 425°F, then reduce to 350°F (175°C) and bake 35–40 min more. Cool before slicing.

ALMOND-POLENTA PLUM TART — TOO FANCY OR JUST PERFECT? 🍑✨
Ingredients:
¾ cup almond flour

¾ cup polenta (fine grind)

½ cup all-purpose flour

⅓ cup sugar

½ tsp salt

½ cup butter, cold and cubed

1 egg

1 tsp vanilla

4–5 ripe plums, sliced

Optional: powdered sugar, slivered almonds

Directions:
Preheat oven to 350°F (175°C).

Mix almond flour, polenta, flour, sugar, and salt. Cut in butter until crumbly.

Add egg and vanilla; mix until dough forms. Press into tart pan.

Arrange plum slices on top in spiral pattern.

Bake 35–40 min until golden. Cool and dust with powdered sugar or almonds.

Rustic, nutty, buttery… and those plums on top? 😍

IS THIS THE MOST COMFORTING SALAD EVER? 🥗🍠

Ingredients:

2 medium sweet potatoes, peeled & cubed

1 tbsp olive oil

¼ tsp salt & pepper

4 cups chopped kale

2 tbsp lemon juice

1 tbsp olive oil (for massaging kale)

¼ cup grated Parmesan

¼ cup Caesar dressing

Optional: croutons, sliced almonds

Directions:
Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, pepper, roast for 25–30 min.

Massage chopped kale with lemon juice + olive oil until soft (about 2–3 min).

Add roasted sweet potatoes, Parmesan, Caesar dressing, and toss well.

Top with croutons or almonds if desired.

Roasted sweet potatoes + kale + creamy Caesar dressing = healthy but still hits like a hug.

WHICH FRUIT WOULD YOU STUFF IT WITH? 🍍🥝🍇

Japanese Fruit Sando (Milk Bread Sandwich)

Ingredients:

8 slices Japanese milk bread (shokupan or thick brioche)

1 cup heavy cream

2 tbsp sugar

1 tsp vanilla extract

Assorted fruits: strawberries, kiwi, mango, grapes — peeled & sliced

Directions:
Beat cream, sugar, and vanilla until stiff peaks form.

Spread whipped cream thickly on one slice of bread.

Arrange fruit in a pattern (use diagonal placement for pretty cuts).

Add more cream, top with another bread slice.

Wrap in plastic wrap and chill 30–60 min.

Slice diagonally to reveal fruit mosaic.

It's sweet, tart, and tastes like childhood summers in a bowl.

Strawberry Rhubarb Crisp

Ingredients:

3 cups chopped fresh rhubarb

2 cups sliced fresh strawberries

½ cup granulated sugar

1 tbsp cornstarch

1 tsp vanilla extract

Crisp Topping:

¾ cup rolled oats

½ cup all-purpose flour

½ cup brown sugar

½ tsp cinnamon

6 tbsp cold butter, cut into cubes

Directions:
Preheat oven to 350°F (175°C).

Toss strawberries and rhubarb with sugar, cornstarch, and vanilla. Pour into greased 8x8 baking dish.

In a bowl, mix oats, flour, brown sugar, and cinnamon. Cut in butter until crumbly.

Sprinkle over fruit and bake for 35–40 minutes, until bubbly and golden.

Cool slightly and serve with vanilla ice cream!

Cheddar-Stuffed BBQ Bacon Bombs
Ingredients:
1 lb ground beef

1/2 cup BBQ sauce (plus extra for brushing)

1/2 tsp smoked paprika

1/4 tsp cayenne (optional)

1 tsp onion powder

1/2 tsp salt

Cubes of cheddar cheese (about 1-inch each)

8–10 strips of bacon

Toothpicks

Instructions:
Preheat oven to 400°F (200°C).

Mix ground beef with BBQ sauce, paprika, cayenne, onion powder, and salt.

Flatten a portion of beef, place a cube of cheddar in the center, and seal into a ball.

Wrap each bomb with a slice of bacon. Secure with toothpicks if needed.

Place on a baking rack over a lined tray. Brush with BBQ sauce.

Bake for 25–30 minutes, flipping once and brushing with more BBQ sauce halfway through.

Broil for the last 2–3 minutes for crispy bacon.

Garlic Parmesan Cheeseburger Bombs
Ingredients:
1 lb ground beef

1/2 cup diced onion

1 tsp garlic powder

1/2 tsp salt & 1/2 tsp pepper

1 tsp Italian seasoning

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1 can refrigerated biscuit dough (8 count)

2 tbsp melted butter

1 tbsp minced parsley

1 tbsp garlic paste or crushed garlic

Instructions:
Preheat oven to 375°F (190°C).

Cook beef and onions in a skillet until browned. Drain fat, stir in garlic powder, salt, pepper, and Italian seasoning.

Flatten biscuit dough and fill each with 1–2 tbsp beef and cheddar.

Pinch to seal and shape into balls. Place seam-side down on a greased baking dish.

Mix melted butter, garlic, parsley, and Parmesan. Brush generously over each bomb.

Bake for 15–18 minutes or until golden and bubbling.

Sprinkle with more Parmesan and parsley. Serve warm!

Homemade McGriddle
Ingredients:
For pancakes:

1 cup flour

2 tbsp sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3/4 cup milk

1 egg

1 tbsp melted butter

1 tbsp maple syrup

For filling:

2 sausage patties or beef patties

2 slices cheddar cheese

1 tbsp ketchup (optional)

Extra syrup for drizzling

Instructions:
Mix pancake batter and cook 4 small pancakes.

Cook sausage or beef patties until browned and cooked through.

Assemble: Pancake base → cheese → meat → ketchup/syrup → cheese → pancake top.

Return to skillet and heat until cheese melts and it’s warmed through.

Ingredients:
1 sheet puff pastry (thawed)

1/2 lb ground beef

1/2 tsp garlic powder

Salt & pepper to taste

4 strips cooked bacon, chopped

1 cup shredded cheddar cheese

2 tbsp melted butter

1 tsp dried parsley

Instructions:
Preheat oven to 375°F (190°C).

Cook ground beef with garlic, salt, and pepper. Let cool.

Unroll puff pastry and layer cheese, bacon, and beef evenly.

Roll up tightly, slice into 1.5-inch rounds, and place on baking tray.

Brush tops with melted butter and sprinkle with parsley.

Bake for 20–25 minutes or until golden and flaky.
