At the end of January this year, and I took a trip to far in Fallbrook and collect about 300-400 # of persimmon, that’s the second time that season we- SC- picked persimmon to make kombucha, ended up with 1+ ton of persimmon that we turned into Jam, Raw Kombucha and started a vinegar hoping goes well 🤞🏽. Finally after 6 months -most of everything out of that trip went well- we were able to bottle the vinegar with the complex flavor, you can smell and taste the persimmon, but also the skins. We also picked that small tree of mandarines that we turned into mandarin & Meyer lemon kosho with Calabrian chilies from last year season that were lacto- fermented for 6+ months.
