We met Carlos Piernas while on the hunt for someone to smoke O-Med olive oil. A master “Ahumador”, Carlos treated us to smoked bacalao, eel, rice, cava, and his famous Carpier smoked salmon. We have been dreaming about this product ever since.

We first met Chris and Kristine Roelli in Madison at Fromagination. Kristine offered us a sample of a cheddar/blue cheese. We had only begun selling cheese and were more than intrigued. The next week we drove to Darlington, WI and bought 20 cases of Dunbarton Blue. Chris said, “I guess you want an exclusive now.” We became his first distributor.

A lot a has changed since then but Chris’ skills at the vat have not. We are beyond stoked to sell Roelli Raclette just in time for the holidays. 🦃

In Spain, olive and cheese pairings are not a thing. Olives are a gifted as a tapa when you sit down and order a cana (beer). Cheese happens later, on its own board, next to a well balanced plate of Jamon. When we first began Philosophy we held educational sessions that broke this rule. It turns out the unique flavor profiles of @losadaolives can create a third flavor when paired with the perfect cheese match. While we would give most anything right now to experience a cana and a free tapa, we stand by our decision to pair. 🍻

Scenes from Saturday’s celebration lunch at @larinabrooklyn. We stuffed ourselves on an umami filled butternut squash soup, handmade pasta and aperol spritz. Not only is @chefsylviabarban and team putting out great comforting food, they have amazing taste in tinned seafood from @conservaslabrujula and semi preserved brown anchovies from @bahiadelaconcha in their deli.

After O-Med produces the Yuzu oil with the skin of the fruit, lots of lovely juice is left for the production of this lightly tart vinegar. Add to raw or tinned fish preparations and savory or fruit salads for a hint of balanced acid.
