Good morning everyone.. look forward to seeing everyone this year. Should be a good one since you now can legally feed your deerđđŚ! (1)We will not be open for the Velvet hunt, itâs just not worth it, very few get harvested. But, I have told the few people that have called that feel free to call me if you get one and if we are available I will be glad to skin and quarter it for you($50). Due to heat it is critical to do this promptly! (2)Also, I have decided to start giving a discount for butchering YOY deer (young of the year)(yearlings).. they are the most tender delicious deer, but half the size of a normal doe. So, YOY will be our minimum charge of $130, and this will be a regular cut, bstrap, tloin, burger, ham steaks upon request..(3)and I would like to address one other subject, we always take the extra time to clean the meat up extensively. On backstraps, we strip them, clean them, and cut in half⌠we do not cut them or butterfly them. That way when you thaw them out, you can cut them to whatever size you prefer! Everyone is different. This helps us with efficiency. (4) Summer Sausage. (Ours is uncooked)This is our top, most loved item. But We do not vacuum seal it. We package in the breathable sleeve and freeze. 90% of people consume it within a few months, but I have learned that after about 6 months, when you cook it, the outside rim will have a small layer of lighter colored meat. This is a slight freezer burn. So I have purchased large vacuum seal bags for this. Most donât need this, but if you think you will not consume within 4/5 months we can vacuum seal for a small upcharge. Hope everyone has had a wonderful summer and is as excited as we are for fall and cooler temps!!! Thank you all for continuing to trust us with the processing of your deer! Oh, (5). I am a duck hunter and decided to make duck summer sausage a couple years ago and it was amazing!! Better than deer!! So I offer that also. We did several batches last year. So I will continue this. But you have to bring me the cleaned breast meat in and cooler, dry!! Not wet soaked in water!! Approximately 20 lbs. it takes about 40-50 ducks to do this
