Crockpot cold day Chilli 🌶 😋

2lbs Ground beef and pork blend (you can use any ground meat of your preference)

1 large can tomato puree or crushed
tomatoes-WIC

1 can fire roasted diced tomatoes or just regular diced tomatoes -WIC

1 can dark red kidney beans-WIC

1 can light red kidney beans- WIC

1 large bell pepper-WIC

1 jumbo yellow onion - WIC

2 packs chilli seasoning packets

Extra seasonings of your choice / garlic powder, Onion powder, smoked paprika and badia season all.

Brown meat and put in crockpot. Turn on high. Add all cans of veggies. Chop and brown up your pepper and onion in the meat grease add a bit of oil if needed not much. Put peppers and onions in crock pot and add chilli packets. Give it a really good stir. If your chilli looks chunky and thick like it may need more liquid wait till its half cooked before adding more liquid it tends to get less thick as it cooks. Cook on high for 4 hours then give a good stir and cook on low for additional 4 hours. I prefer a longer cooked chilli 🌶 but you can just cook on high for 4 to 5 hours or low for 6 and it will be done. Timing is up to you👏 enjoy with oyster crackers atop or saltines!

🍴Southern hashbrown fiesta potatoes 🥔

1 diced bell pepper small or medium size ( Wic Approved Item)

1 small red onion or half of a large one (Wic Approved Item)

5-10 Small Yukon gold yellow potatoes (Wic Approved Item)

3 Tbsp Butter or margarine or oil

Seasonings

Garlic powder
Onion powder
Salt and pepper
Smoked paprika
Kinders buttery steakhouse

Meat - optional

Dice your veggies and add seasonings mix well and sautee over medium high heat until brown then turn heat to low and cover simmer for about 15 mins maybe a little more or less time depending on the amount. Add cooked meat at end and cover for a few minutes longer and stir well until everything is heated.

TIPS:

you could also use yellow onions and add garlic .

Toppings like cheese or sour cream are good as well.

🍲Gnocchi Smoked Sausage Soup Chowder or Copy cat olive garden Gnocchi soup with a big twist😃

1 Smoked sausage link ( Aldi has best price but can find on sale in many grocery stores; hills hillshire, and other brands etc.)

2 packages potato Gnocchi (Aldi has best price and quality)

1 small container heavy cream

1 quart vegetable stock

1-2 cups chicken stock

2 medium size broccoli crowns (Wic Approved Item)

1 bag of carrots (Wic Approved item) whole or baby

2 small shallots
Or
1 large yellow onion (Wic Approved Item)

1 or 1 and 1/2 Cups sharp cheddar (Wic Approved Item)

1/2 or 1 cup milk (Wic Approved Item) or
Half and half

Seasonings:

Paprika
Onion powder
Garlic powder
Badia complete
Onion flakes
Salt and pepper

Wash and Peel and chop carrots if whole.
Peel and dice onion or shallots.
Wash and chop broccoli cut off as much of stalk and possible.

Cut Smoked sausage into thin rounds.
Brown sausage in butter
Brown carrots and onion in butter or oil.

We are using a crock pot for this but you can use a soup pot as well.

Put your browned sausage, carrots and onions or shallots in bottom of crock and pour in full container of veggie stock and heavy cream.
Add in chopped broccoli and give it all a good stir.
Add in cheese and seasonings.

Stir very well and let cook on high for 2-3 hours.
Stir again and then turn heat to low for a hour.

Turn back up to high and add Gnocchi. Let cook on high for additional 20 minutes. Stir very well.

🥣 cool a bit and enjoy.

TIPS:

add shredded parmasean to the soup when you add the Gnocchi

You can also use a different meat like chicken or ham to this instead of sausage link.

Grilled cheese pairs well with this especially

🌽Country Corn Casserole 🌽

This is a great side or as a meal itself. You can also cut this recipe in half to make less or double to make more.

4 cans of whole kernel corn (Wic Approved item)

1 and 1/2 cups sharp cheddar cheese (Wic Approved Item)

1/2- 1 cup Monterey Jack cheese

2- 3 Tbsp Butter or margarine

1-2 bunches of green onions ( Wic Approved Item)

3-4 Large eggs (Wic Approved Item) I do one egg per can of corn

1- 1 and 1/2 Cups of milk (Wic Approved Item)

Salt and pepper
Onion powder
Garlic powder
Smoked paprika

Coat a casserole dish with margarine or butter.

In separate bowl mix together all cans of corn drained, add eggs and give a good mix. Then fold and mix in both cheeses. Add your milk and chopped green onion. Add butter melted and seasonings. Mix very well then pour into buttered casserole dish and top with a few more green onions.

Bake at 350-375° for 25 to 35 minutes.
Cool serve and enjoy!

Tips:
You can broil at the end for a few minutes to give the top more browness.

You could add cooked bacon or uncooked bacon crumbles to mixture before baking. I would do cooked to make it less greasy.

You could add most any meat thats diced or chopped or ground and cooked into this dish to make it a meal.

Mix in 1-2 Tbsps of sour cream before baking for a even more rich flavor.

Roasted Spaghetti Squash 🥘

2 Spaghetti Squash (Wic Approved Item)
Olive oil or butter
Seasonings of your choice

Rinse off your Spaghetti squash.
Cut them both in half and remove all seeds with a tablespoon.

(You can save your seeds for planting or discard. If you save them try ro remove all squash from the seeds. Rinse seeds in strainer with cold water . Shake off as much water as possible in strainer after rinsing. Lay seeds in rows on doubled paper towels and fold over another paper towel so the seeds are in between. Let seeds fully dry out in a cool dry place for 2 to 3 days then remove and place in a labeled ziploc bag).

After cleaning all seeds out
Line a sheet pan with foil and preheat your oven to 350-375°.
Place the squash in pairs skin side down. Rub the insides of squash with olive oil or butter/margarine and season well .

I use:
Onion powder
Smoked paprika
Salt & pepper
Garlic powder
Badia complete seasoning
Onion flakes
Kinders buttery steakhouse

You can use any seasonings you like or just salt and pepper is great.

Turn the seasoned and oiled squash over skin side up onto the foil (nonstick side) and place in oven for about 30-45 minutes, until the skin has browned edges.

Once they have cooled a bit flip them over skin side down and simply take a fork and scrap the Spaghetti squash from the insides into a bowl. Once you have got as much of the squash you can out then add 2 tablespoons of butter or oil or margarine to the bowl of squash and if you want more seasonings and enjoy ! This is also a great side to add to your dinner and pairs well with most meats and other veggies.
