Pepper 🌶️ Jelly Shrimp Tacos! 🌮

A summertime dinner fav that we honestly forgot about! STakes 10 minutes start to finish:

Crisp tortillas in a heated skillet and set aside. We used siete foods but my favorite are the plain, uncooked flour ones from Costco. Use that same pan to sauté shrimp & season with Cajun seasoning. Shrimp cook in two seconds so real quick while they simmer put pepper jelly on one side of each tortilla, cream cheese or mayo on the other (either one is delish, you just need something creamy!). Add your shrimp when finished & top with cabbage for crunch!

A quick, weeknight dinner fav in our house!

Basil Pesto Pasta Salad 🌿

You’ll need:
2 1/2 cups fresh basil leaves
2 tbsp Parmesan cheese
3 cloves garlic
3 tablespoons cashews (or pine nuts, I had cashews on hand and they made this so creamy)
1/2 teaspoon salt
Black pepper to taste
1/4 cup olive oil (you may need little more for drizzle)

Combine all ingredients in a food processor and drizzle olive oil as needed until you get a smooth paste like texture. Pour over pasta of choice! I used a protein pasta (second picture) and added mozzarella pearls and chopped sundried tomatoes. *cool your pasta before combining if you are going to add mozzarella pearls or they will melt* This was to die for 🤤

We added some marinated grilled chicken breast from Albertsons and served it over chopped baby spinach. So good! Also plan to have leftovers chilled for lunch this week. Tag me if you make this, it is delicious!

Sunday Night BBQ Baked Chicken 🍗

You’ll need:
4 bone in chicken thighs
BBQ dry rub
BBQ sauce (we used sweet baby rays)
Smoked paprika

Directions:
Heat oven to 400F. Season chicken with BBQ rub and smoked paprika, massage into chicken with BBQ sauce (be generous). Bake for 20 minutes, baste and then bake another 5 minutes or until chicken is 165F internal temp. So good!!!🍴

We had it with Mac & cheese and a salad kit tonight! 🥗

One of my favorite principles to introduce to clients is to always pair fruit with protein or fat. Fruit is good for us and we know this, but it’s is primarily carbs, so to balance this we add protein/fats for lasting fullness & energy 😘

Baked Chicken Parm 🍝

Probably the first healthyish recipe I ever decided to try in the kitchen and I always forget about it! So good & comforting 😌

You’ll need:
2 eggs
Thin sliced chicken breast
Italian style bread crumbs
Grated Parmesan cheese
Red sauce
Fresh mozzarella
Basil, oregano, garlic, salt & pep

Preheat oven to 410 F. Season chicken breast with salt, pepper. Whisk two eggs + a splash of water. Mix together bread crumbs, Parmesan cheese, basil, oregano, and garlic powder (nothing particular just put about 1/2 bread crumbs, 1/2 parm cheese and then season well). Place chicken in egg wash and then into bread crumb mixture. You don’t want the mixture super cakey bc it will be soggy so just an even coating. Bake for 10 minutes then flip, bake another 10 (chicken needs to be 165 F, if you have a meat thermometer). Put a few spoons of red sauce on top, and a couple slices of fresh mozzarella. Bake again until cheese melts. Top with basil 🌿 🤌🏻💋

We had it with angel hair & the rest of the red sauce! SO. GOOD.

Pro tip for a jar of red sauce: heat olive oil on med-low heat, add in Italian seasoning and garlic. Let those warm up & simmer a couple minute until you smell them. Add in the sauce & let simmer 10-15 minutes until thick. Game changer🥫

Ugly lighting but a great dinner 🤤

Derek picked out a quinoa and brown rice blend at the new and it is 10/10 delish! We had it tonight with air fried salmon and roasted Brussels sprouts. So good!

To air fry salmon:
Marinate salmon 12 hours in Italian dressing and seasoning of choice. Air fry at 410 degree for 12-20 minutes (depends on how big)

For Brussels:
Heat oven to 410. Cut the bottom off the Brussels and then cut them in half. Spray avocado oil or drizzle olive oil and salt, pepper, garlic powder. Spread on a lined sheet pan and bake for 15 minutes.

Ingredients:
1/2 cup frozen cauliflower (no, you won’t taste it 🙄)
1 frozen banana
Milk of choice
1 scoop vanilla protein of choice

Blend! 😋

You could always use a vanilla premixed shake like premier or quest instead of milk and protein powder. Let me know if you try it! ☃️
