Just down the road from HBF and Slaughterhouse is Dairy Air Farm, home to our mixed herd of jerseys and holsteins, along with four Lely milking robots.

Our dairy cows spend their days in our temperature-controlled barn choosing when they want to be milked, when they want to eat, and when and where they want to lie down.

We take care of them, so they can take care of us.

We understand there are a lot of questions when it comes to buying bulk meat and we wanted to clear up some frequently asked questions and terms you may hear us use.

“Hanging weight” (or dressed weight) is the weight after the animal is slaughtered and the unusable parts are removed. Hanging weight includes bones and meat. Typically, the hanging weight is about 60% of the live weight. (See picture below)

The “boxed weight” is the weight of all the meat you will take home. In beef this totals about 60-65% of the hanging weight. For pork, boxed weight is typically about 70% of the hanging weight.

When it comes time to decide what cuts of meat you’d prefer to take home (ground meat, steaks, roasts, etc), we are happy to help you decide what is right for you.

Farming is a 365 day a year, all-hands-on-deck kind of commitment.

For Bryce, however, that is the best part of farming with his family - the extra time they get to spend together completing projects and during daily chores. “Bonus” time, if you will, that he otherwise might not have with his parents and brothers.
