Italian Style Toast

Ingredients:
2 slices rustic Italian bread , sourdough, or country loaf
1 1/2 cups whole milk ricotta cheese
EVOO (Plain, Tuscan Herb or Milanese Gremolata)
Fine sea salt optional

Directions:
Toast the bread slices until golden until golden and crisp on the outside, yet still tender inside.
Warm bread helps the ricotta spread smoothly.
Place 1 1/2 cups of ricotta in a small bowl.
Stir gently with a spoon or spatula just until creamy and spreadable. (Avoid overmixing)
Spread a generous layer of ricotta over each warm slice of bread.
Drizzle lightly with EVOO
Add toppings of your choice! Like a tapenade, cheese & prosciutto, figs or tomato & basil.
