Athens and surrounding friends - we are stocked up in Rooted: ETX Local Goods + Market
We have singles of ground beef, primal ground beef, pan sausage, hot pan sausage, link jalapeno and cheese sausage, hot link jalapeno and cheese sausage.
We have 10 pound boxes of ground beef, 10 pound boxes of primal ground beef, and 10 and 20 pound homestead boxes.
Our homestead boxes consist of ground beef, steaks, and specialty cuts like roasts, stew meat or short ribs.

Today was pork pickup day from Panola County Processing!
These three pigs are already headed in several different directions. Some of the pork is already spoken for by customers, some is headed to a large private Father's Day catering event, and the rest is making its way to Rooted: ETX Local Goods + Market in Murchison.
While we're only starting with our sausage varieties at Rooted for now, I've added pics of several cuts that came back. Just look at those pork chops. At 1½ inches thick, they're the kind of beauties you'd see served at a high-end steakhouse, not the grocery store variety. Juicy, flavorful, and worthy of being the centerpiece of a meal all by themselves.
We're also getting ready for a fun few weeks at Rooted: ETX Local Goods + Market. On June 27th, we'll be hosting a Homestead Box Building & Talk Day with DJ (sign up on a post below!).
After that, we'll be holding several sausage tasting days at Rooted, so everyone can sample some of our different flavors before they buy. We'll have our re**er meat van on site during these events as well, with all our different meats, both boxes and single cuts!
Days like today are a good reminder of why we do this. Raising animals with care, working with local processors, partnering with local businesses, and ultimately helping connect people to their food.

In just a few weeks, we'll be launching a newly updated website along with individual cuts across all of our proteins. That means you'll be able to order exactly what you want instead of only purchasing whole animals, bulk shares, or curated boxes.
These chicken cuts are some of the first to come back from the butcher, with more on the way. Soon you'll be able to shop individual chicken cuts, beef cuts, pork cuts, and—finally— lamb.
We've already launched nationwide shipping, and these updates will make it easier than ever to stock your freezer with exactly what your family enjoys most.

Tonight's dinner was a 4.7 lb pasture-raised spatchcock chicken (weight after the backbone was removed) seasoned with tallow, salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika, then roasted at 425°F until perfectly golden and juicy.

For only being a 7 weight, our new little bull calf is already trying to own the place.
He's been here all of one day and has apparently decided that he's the boss.
This mama is humoring him - so far.
One thing we love about cattle is that they all have their own personalities. Some are quiet. Some are curious. And some show up on day one ready to challenge anything with four legs and a heartbeat.
This little bull calf definitely falls into that last category.
We're looking forward to seeing if he grows into all that confidence... or if the cows eventually remind him who's really in charge around here. 🤣

A growing herd for a growing ranch.
Today, we welcomed 15 new heifers and 3 bull calves to SK Prime Pastures.
Most are South Poll cattle, with a few South Poll crosses, and we're excited to watch them become part of the future of our herd.
As demand for our beef continues to grow, we're committed to building a sustainable herd that allows us to continue providing our customers with the same quality they've come to expect.
One thing many people don't realize is that growth in a grass-fed and grass-finished operation happens very slowly.
While these heifers are already around 700 pounds, the decisions we're making today are still investments in the future of our ranch. Between breeding, calving, and raising the next generation entirely on grass, the impact of these additions won't be fully realized for close to four years.
That's the reality of regenerative agriculture: we're always planning years ahead, not months ahead.
For us, growth isn't about getting bigger as quickly as possible. It's about growing responsibly, improving our genetics, and building a herd that thrives on grass while fitting our regenerative management system.
Every new animal represents years of future investment in our ranch, our land, and the families who trust us to raise their food.
