This is one of my go-to recipes when I need something fast and easy.

Ground Beef and Gravy Over Mashed Potatoes

Ingredients:
For the Mashed Potatoes
water
1 tablespoon salt more or less to taste
2 pounds russet potatoes peeled, cut into 1-inch pieces; or Yukon gold potatoes
3 tablespoons butter at room temperature
½ cup whole milk at room temperature
½ teaspoon garlic powder
salt to taste
freshly cracked black pepper to taste
For the Ground Beef and Gravy
4 tablespoons arrowroot powder
1 pound ground beef
1 ½ cups beef broth
1 teaspoon salt, more or less to taste
¼-½ teaspoon freshly cracked black pepper

Directions:
For the Mashed Potatoes
Put 1 c of water in the bottom of the instant por. Add a steamer basket and put potatoes on tip. Set pot on high pressure for 10 minutes or until potatoes are fork tender.
When potatoes are fork-tender, carefully transfer them to a bowl. Use potato masher, fork or electric mixer to mash potatoes to desired consistency, adding in butter and milk as you go.
Once combined, season potatoes with salt and freshly cracked black pepper. Stir well to incorporate, then taste and adjust seasonings as needed. Set potatoes aside until ready to serve.
For the Ground Beef and Gravy
Heat large skillet over medium heat. When pan is warm, add 1 pound ground beef. Cook and crumble beef until no longer pink, then drain any liquid from pan and discard.
Add 1 ½ cups beef broth to skillet with ground beef. Stir gently to incorporate ingredients, then simmer uncovered 5 to 10 minutes or until hot. Slowly add arrowroot powder to skillet, whisking gently until fully incorporated. Keep hot and keep stirring until mixture thickens. Do not boil.

Most people see grasshoppers as pests. Don't get me wrong, they are when they're in the wrong place and in the wrong numbers. But when they're in my hand, they're valuable.

I plan a week of meals in advance, which helps my stress levels, but sometimes life gets in the way and ruins even the best laid plans. That's when I rely on things I've made extra of when I do cook. I freeze staples like rice, cooked ground beef, sauces and even leftovers of meals. When life gets crazy, all I have to do is pull these staples out and reheat them.

Have the kids set the table while you drop the steak into a hot cast iron skillet.

I put this flank steak into a simple 5-ingredient marinade in the morning, and that two minutes of prep made supper fairly effortless.

2 T olive or avocado oil
2 T coconut aminos
1 T balsamic vinegar
2 cloves garlic, diced small
1 t salt
Optional: scallions and/or salt for garnish

I think a lot of people assume they have to choose between the things they care about when buying beef.

You can want grass-finished beef and want an incredible steak.

You can care about how your beef is raised and want burgers your family begs for.

You shouldn’t have to compromise on flavor just because you care about what you’re buying.

And yes… we’ve been eating very well around here lately. 😉
