Turn 2 Eggs into Fluffy Japanese Soufflé Pancakes

Ingredients:

2 medium eggs

4 tsp milk (20 ml)

2-3 tbsp cake flour (or all-purpose flour)

1/2 tsp vanilla extract (optional)

3 tsp sugar

Instructions:

Separate Eggs:

Crack the eggs and carefully separate the yolks from the whites.

Prepare the Yolk Mixture:

Add milk to the egg yolks and mix well.

If desired, stir in vanilla extract for extra flavor.

Sift the flour into the yolks gradually, mixing until you get a creamy batter. Set aside.

Whip the Egg Whites:

Place egg whites in the freezer for 10-15 minutes before whisking (optional but helpful).

Start whipping the whites at low speed until foamy, then gradually add sugar.

Increase speed to high and whip until stiff, shiny peaks form. Be careful not to overbeat.

Combine Mixtures:

Gently fold 1/3 of the whipped egg whites into the yolk mixture until smooth.

Add the yolk mixture to the remaining whites and fold gently using a spatula to keep it airy.

Prepare to Cook:

Heat a non-stick skillet over very low heat and lightly grease it.

Optionally, transfer the batter into a pastry bag for precise shaping, or use a spoon.

Cook the Pancakes:

Spoon or pipe the batter onto the skillet. The batter should hold its shape.

Add a few drops of water to the pan to create steam, then cover with a lid.

Cook for 7-10 minutes on one side. Avoid lifting the lid too often.

Flip & Finish Cooking:

Carefully flip the pancakes (use a spatula and your hand for support if needed).

Add a few more drops of water, cover, and cook for another 5 minutes.

Serve and Enjoy:

Plate the pancakes immediately and serve with your favorite toppings like powdered sugar, fresh fruit, syrup, or whipped cream.

Pro Tips:

Whip the egg whites just until stiff peaks form for the perfect meringue texture.

Always cook on low heat to prevent deflation.

Steam helps the pancakes stay moist and rise evenly.

Chocolate M&M Celebration Cake 🍰🎉

A fun celebration cake that appeals to both the eyes and the palate, with soft chocolate cake layers, silky chocolate cream, and colorful M&Ms.



Ingredients

For the Chocolate Cake
• 2 ½ cups flour
• 2 cups granulated sugar
• ¾ cup cocoa powder (sifted)
• 2 teaspoons baking powder
• 1 ½ teaspoons baking soda
• 1 teaspoon salt
• 2 eggs (at room temperature)
• 1 cup milk
• ½ cup vegetable oil
• 2 teaspoons vanilla extract
• 1 cup hot water (or hot coffee – for aroma)



Chocolate Cream (Ganache Buttercream)
• 200 g dark chocolate
• 200 ml liquid cream
• 150 g butter (at room temperature)
• 1 ½ cups powdered sugar



For the Filling & Topping
• 1 – 1 ½ cups M&M’s
• Optional: chocolate chips, colored sprinkles



Preparation

1. Preparing the Cake
1. Preheat the oven to 175°C (350°F).
2. Grease and flour two 20–22 cm springform pans.
3. In a large bowl, mix the flour, sugar, cocoa, baking powder, baking soda, and salt.
4. Add the eggs, milk, vegetable oil, and vanilla extract, and beat until smooth.
5. Finally, add the hot water (the batter will be runny).
6. Divide the batter evenly between the pans.
7. Bake for 30–35 minutes. Remove from the oven when a toothpick inserted into the center comes out clean.
8. Let the cakes cool completely.



2. Chocolate Cream
1. Heat the cream, remove from heat before boiling.
2. Add the chocolate, wait 2 minutes, then stir until melted.
3. When it reaches room temperature, add the butter and powdered sugar and beat until fluffy.



3. Assembling the Cake
1. Place the first cake layer on a serving plate.
2. Spread chocolate cream on top and sprinkle with M&M's.
3. Cover with the second cake layer.
4. Cover the entire cake with chocolate cream.



4. Decorating
• Place plenty of M&M's on the sides and top.
• Finish with chocolate drips, sprinkles, or candles as desired 🎉



Serving Suggestion

🕰️ Let the cake rest in the refrigerator for 1–2 hours before slicing.
It will cut more cleanly and the flavor will settle 😍
