Yam Porridge (Asaro) Recipe
Ingredients
1 medium tuber of yam (peeled and cut into cubes)
1 cup palm oil
2–3 medium tomatoes (blended)
1 red bell pepper (tatashe, blended)
2–3 scotch bonnet (ata rodo, blended)
1 medium onion (chopped)
1 smoked fish / dry fish (cleaned and deboned)
1 cup diced ponmo (optional)
1 cup washed dried crayfish
Seasoning cubes
Salt (to taste)
A handful of ugu or scent leaves (optional)

🧑🍳 How to Prepare
1. Boil the Yam:
Add yam cubes into a pot, pour enough water to half-cover them, add salt and some onions. Start cooking.
2. Prepare the Sauce:
In another pan, heat palm oil, add onions, then pour in your blended tomato + pepper mix. Fry until the oil rises to the top.
3. Add Protein:
Add smoked fish, ponmo, crayfish, seasoning cubes, and salt. Let it simmer for 5 minutes.
4. Combine:
Pour the fried pepper sauce into the pot of boiling yam. Stir gently.
5. Mash Slightly:
Allow to cook until yam is soft. Mash some yam pieces to thicken the porridge.
6. Final Touch:
Add chopped ugu or scent leaves if you like. Stir and let it simmer for 2 minutes.
