Moroccan Pistachio Ghriba Cookies 🇲🇦

Ingredients
• 1.5 kg ground pistachios or almonds
• 750 g powdered sugar
• 7 large eggs
• 3½ teaspoons baking powder
• 7 tablespoons orange blossom water
• 14–18 tablespoons vegetable oil
• Powdered sugar

1. In a large bowl, combine the ground pistachios, powdered sugar and baking powder.
2. Add the eggs, vanilla, orange blossom water, and oil.
3. Mix until a soft, slightly sticky dough forms. Do not overmix.
4. Cover and let the dough rest for 20 minutes.
5. Shape into balls (about 15–18 g each).
6. Roll each ball generously in powdered sugar.
7. Place on a baking tray lined with parchment paper, leaving space between cookies.
8. Bake in a preheated oven at 165–170°C for 12–14 minutes.
9. Cookies should stay pale and crack slightly on top.
10. Let cool completely before removing from the tray.

From now on, I’ll be able to share more recipes and methods for creating amazing sweets at a true 5-star hotel level — something I’m really passionate about!

I’ve just started working at The Waterfront Hotel in Gzira, and I’m so happy to be part of such a welcoming and talented team. From day one, everyone has been incredibly kind and supportive. The Executive Chef is an amazing person who inspires and helps us grow every day.

This Sunday, we had the chance to create a beautiful lunch together, and I was truly impressed by the teamwork and positive energy in the kitchen. It feels great to be surrounded by people who respect and care for each other.

Feeling grateful and excited for what’s ahead! 🙌
