Transform your diet with this nutritious Chickpea Salad! Fresh, flavorful, and perfect for any meal.🥗
Ingredients:
🥣Boiled Chickpeas(चना /Chana)
🧅Chopped Onion
🥒Chopped Cucumber
🌶️Red Bell Peppers
🌶️Yellow Bell Pepper

For Dressing:
🍚Curd
🪹Walnuts
🌱Mint Leaves
🍋LemonJuice
🫒OliveOil
🧂Salt
🫙BlackPepper
🌊Water (optional)

Instructions:
1. In a large mixing bowl, add boiled chickpeas, chopped onion, chopped cucumber, red bell pepper, and yellow bell pepper:
2.In a blender jar, add curd, walnut, mint leaves, lemon juice, olive oil, black pepper, salt, and water
(if needed to adjust the consistency). Blend until smooth.
3.Pour the dressing over the salad : mixture and toss well to combine and coat the ingredients evenly with the dressing.
4.Garnish with additional mint leaves if desired.
Serve immediately or chill for some time before serving to let the flavors meld together.

Lemony spinach salad with
crispy chickpeas, hard boiled eggs, tomato,
avocado, kalamata olives and red onion
drizzled with olive oil and fresh lemon juice. 1
often put this salad on repeat and it hits the
spot every single time!

To make the crispy chickpeas, drain and rinse a can of chickpeas. Toss with olive oil to lightly coat and season as desired. I used sea salt, garlic powder and smoked paprika. Spread on a baking sheet and roast on 425 F for 12 minutes, or place in air-fryer and cook for 12 minutes.
