GALWAY📍

We've spent the last year converting an old bank into a restaurant and are officially opening our doors this Saturday the 27th of June.

This opening feels extra special for us, we spent a huge amount of our childhood in Connemara and used get to get the train up to Galway City to skateboard as teenagers.

We’ll be running some soft openings this week to test out the space and help train the team so keep an eye out for more info.

Sauce Vierge, Pan Roasted Salmon and Lemon

2 salmon fillets
1 k**b of butter
1 clove garlic
Thyme

Sauce Vierge
3 finely diced plum tomatoes
1 finely diced shallot
1 grated garlic clove
Bunch of dill
Bunch of basil
Juice and zest of 1/2 lemon
1-2 tbsp cider vinegar
Very generous drizzle of extra virgin olive oil
Salt + pepper

Start by making the sauce vierge.
Finely dice the vegetables. Traditional recipes remove the seeds and skin from the tomatoes, but I don't think it's necessary for midweek cooking. Add a generous amount of good quality extra virgin olive oil, the juice and zest of 1/2 lemon, and the vinegar. Taste for seasoning and allow it to sit for 10-15 minutes to let the flavours develop. It's a vinaigrette, so you want it to be sharp.

The key to crispy anything is removing moisture. I left my salmon skin side up, uncovered in the fridge overnight to dry out the skin. Otherwise, pat it dry with paper towels. Drizzle with a little olive oil and season generously with salt. Cook skin side down in a medium pan with some olive oil. You want to cook the salmon 90% of the way skin side down, as it protects the fish from cooking too quickly while also crisping up the skin. Watch the heat and be careful not to burn it.
Add the butter, garlic and thyme to baste and finish cooking the top side of the fish. Allow it to rest for a couple of minutes.

To plate, spoon the sauce vierge onto a flat dish. Sit the salmon on top and serve with more lemon.

Don't waste any of the tomato dressing, mop it up with bread to avoid licking the plate.

So simple, so classy.

I love a dressed chicken salad - lots of herbs, a punchy dressing and, for me, always celery for crunch.
Great on its own, as a sandwich filler or in crispy lettuce cups. Enjoy!

SUPER SAVOURY BANG BANG CHICKEN SALAD

3 chicken breasts
4 celery stalks
1 red onion
Bunch of scallion greens
2 red chillies
Bunch of coriander
Bunch of mint
1 lime + zest
1 tbsp peanut butter
Generous drizzle of the ‘Super Savoury Chilli Drizzle’

Quick cucumber pickle:
1 cucumber, ribboned
3 tbsp rice vinegar
1 tbsp sugar
Big pinch of salt

Serve with lettuce cups.

Remove the chicken skin and scrape it clean. Ensure it is dry and place it flat on parchment paper. Season with salt, then place another sheet of parchment paper on top and press flat. Roast at 180°C for 20 minutes, or until golden and crisp. Allow to cool before breaking up.

Season the chicken breasts with salt and pan-roast over a medium heat for 5 minutes on each side. Allow to rest, then give them a bang bang to shred easily.

Mix all the shredded chicken with the crunchy vegetables and the spicy peanut butter dressing. Taste and adjust the seasoning if needed.

Pile the chicken salad onto a serving dish and garnish with the crispy chicken skin, red onion, chilli and picked mint.

Serve with the pickled cucumbers and lettuce cups!

We grew up cooking together, and ever since then we’ve been tasting, testing and arguing over our recipes.

This has been 2 years in the making, so it feels amazing that they are finally here.

Drizzles are for marinading, glazing, dressing, drenching and drizzling. Whether it’s a big roast chicken, juicy tomato salad, spicy rice bowl or saucy noodles – they are designed to elevate your home cooking.

We’ve only made a small batch of each, so we’d genuinely love to hear what you think ahead of our next run.
