CAJUN PEACH SAUSAGE 🍑

Cajun was always one of the seasonings that was everywhere when I started cooking. Massively overused, so I forgot about it for a while.

But done right? It’s a total powerhouse.

Real Cajun is all about that deep savoury garlic, herbal depth, and a proper, slow-building pepper heat.
Stick that into delicious british pork shoulder and drop in the dripping sweetness of real peach to cut straight through the spice, and say no more.

Sweet, savory, smoky, with a solid kick at the end.

Stepping away from the ever so tiresome combination of cheese and jalapeño and showcasing different variations of the ingredients.

Halloumi has a great chewy texture compared to cheddar and the sweet little pops from the roquito peppers add another texture to the mix.

So excited to be embracing this new stage at this weekend with some of the finest fire chefs in the country.

In true SOSIJ style im going to be bringing the fire with my demo, in honour of the lord of darkness himself im going to create a proper frankenweiner , well actually OZZY’s BAT!

A combination of a sausage, some wings and some magic to make a ‘bat’

I promise you, this is going to be a real treat.

Extending the flavours of a much loved fennel sausage and showcasing a few more of the wonderful ingredients that Italy has to offer.

A grown up Italian sausage.

Comprising of pork, fennel, sun dried tomato, white wine, lemon zest, garlic and parsley and a slightly coarser grind to honour the nature of this sausage.

THE PERFECT SLICE 🔪

For some time now I for one and many others are all guilty of giving a sausage a big old snap. Why?
The surprise I guess, revealing all those hours of hard work in an instant. It’s fun and exciting!! (And messy)
*dont wear white clothes or new trainers*

But I’m also impressed by the image of a nice cut through, allowing more finesse to the products and really showcasing those carefully prepared ingredients and little pockets of cheese.
