This bone-in shin of beef offers as magnificent an appearance as it does flavour. Perfect for slow-cooking on the bone in red wine or stout. Alternatively smoking long and slow with the bone in results in the most tender beef. Serve with mashed potatoes or soft polenta, charred cabbage and whole grain mustard. Love your leftovers by adding them to a ragu and toss with fresh egg pasta and a hint of Parmesan cheese.
