The Wandering Shepherd saw many challenges in 2015 from mechanical breakdowns to health problems but he got the all clear and made you some cheese. It is aged and ready to go just in time for Christmas. We have three types for sale:
COARA CAISE, Gaelic for sheep cheese. This raw ewe milk Ossau Iratey cheese has a firm paste, mellow flavor and finishes with a slight nuttiness. This a great table cheese but can be used in cooking, either grated or sliced thin.
LAUCHIE’S TOMME, named for our oldest son, this tome style cheese has a rustic rind slightly open paste. Very mellow with hazelnut flavor to finish.
GORM AILIG (“Blue Alec”) named for our youngest son, this raw ewe milk natural rind medium-strong blue cheese is great Christmas treat.
