You can cook them the same way as you cook all the other mushrooms.

Maitake mushrooms are prized for their frilly, feathery clusters and robust, earthy flavor, they add a rich, meat-like texture to dishes and are known for their health benefits.

Discard the tough central core, then tear the clusters into bite-sized "florets" rather than slicing.

Because they crisp up beautifully, they are fantastic pan-seared in butter or oil, roasted until crispy in the oven, or grilled.
They are also excellent in soups, risottos, and stir-fries.

We store them in the fridge on the back of the shop, so ask for help if you need to find them.
