P A N C A K E T U E S D A Y

I remember as a kid getting pancakes at school for Pancake Tuesday! They were the best….Here is my dairy free version that me and my family enjoy eating. It’s very quick and easy recipe so highly recommend trying it out.

Ingredients

🥞 2 large eggs
🥞 1 & 3/4 cups almond/oat milk
🥞 1 teaspoon vanilla essence
🥞 1/3 cup maple syrup
🥞 2 cups of self raising flour

Method

🥞 Whisk eggs, milk, vanilla essence & maple syrup together in a jug. Sift flour into large bowl and addd milk mixture and whisk until combined(ensuring there are no lumps in the mixture).

🥞 Heat large non-stick frying/pancake pan over medium heat. Grease pan with coconut oil or olive oil. Pour mixture and cook pancakes until bubble appear on surface. Turn over and cook for a further 1-2 minutes.

🥞 Transfer to plate and repeat with remaining mixture, greasing pan with oil between batches.

Snap, Crackle, Pop!!

Try these delicious chocolate crackles. Simple and easy to make and the perfect after school snack for@the kids 🙌🏼

Ingredients

🍫 2 cups rice puffs
🍫 1 cup shredded coconut
🍫 ½ cup unsweetened cocoa powder
🍫 ½ cup coconut oil, melted
🍫 4 tbsp maple syrup
🍫 1 tsp pure vanilla extract
🍫 pinch of salt

Method

Line a 9x5 pan with backing paper

In a large bowl combine the cocoa powder, coconut oil, maple syrup and vanilla extract and a pinch of salt

Add in the puffed rice and shredded coconut and mix well to combine

Pour in the rice mixture and use a spatula to level it out so that it smooth on top

Pop into the freezer for 15 minutes until completely set. Once set, remove from the freezer and use a sharp knife to cut into squares for serving. Store in the freezer, as the coconut oil will melt if it gets too warm.

Keep stored in an airtight container in the fridge or freezer.

Looking for a yummy snack that is simple and easy to make?? Look no further than this delicious coconut rough bliss balls.

Ingredients

🥥 100g Almond meal
🥥 80g desiccated coconut (little extra on the side for decorating)
🥥 40g cocoa
🥥 12 x medjool dates (alt 2tbs Rice malt syrup)
🥥 1tsp Vanilla essence

Method

🥥 Place all ingredients into a blender and mix until texture becomes sticky. If mixture s not sticky to roll into balls then either add more dates or a little rice malt syrup.
🥥 Roll into balls and decorate with desiccated coconut.

🥥 Place in the freezer for an hour and then enjoy.
