Repeat orders rolling in from Victoria & Queensland this week, and that never gets old (seeing the same names come back around honestly makes our day). Stewed Apple Muffins for busy days🍏Crack a jar of Stewed Apple Filling & half the work is already done. That's what a full pantry is for ~ preserving the apples back when you had the time (cinnamon, cloves & sultanas all folded through) so a warm batch of muffins is barely any work on the days you are time poor. Bottled these in autumn with apples from Community House (thanks team, they didn't go to waste) ~ sealed in our 86mm Wide Mouth jars for a day just like today. These are Texas-style in size from a recipe I've made for years. Full recipe on the card. So you've dehydrated your produce & now you need to vacuum store it to keep it fresh, crisp + mould free. Our GoodLife Jars are perfect for Mason jar vacuum sealing ~ all you need is the jar, one of our flat dome seals & a little device. It doesn't need to be complicated or expensive. I have two options I use. The cheapest is a simple handheld over-lid + pump (I reach for this a lot), the other is my FoodSaver machine with the manual hand pump ~ I'd pull that out if I was doing a marathon preserving session. Here's what our research turned up (see attached). It really is that easy to store your dried goodies in a jar🤩. In my opinion it's always a good idea to pop an oxygen absorber sachet in each jar for best long-term storage ~ a cheap & cheerful thing you can grab online. Bottom line is glass jars are fabulous for vacuum storing food ~ rodent proof, reusable & non-toxic, with replacement lids readily available too. https://goodlifeaustralia.com.au/collections/preserving

Dehydrating food ~ a great way to preserve & best of all you can pop it in a glass mason jar + vacuum seal for long storage on the shelf. Lets start at the beginning & talk dehydrators. We run the Excalibur💚 & love it, but it's not the only one out there. So if you're thinking "I'd love to do that but no idea where to turn"... we've done the digging for you (top 4, sorted by price, from budget-friendly to the serious homesteader machine). No machine in the budget right now? You can still do it ~ a low oven works, or the old-school outdoor drying safe if you're somewhere warm & dry. My no.1 reason for dehydrating ~ No Sulphites. The additives in a lot of shop-bought dried fruit cause all sorts of issues, & plenty of us are intolerant to them (me included). It all comes back to taking control of what's in your food.

Treasure hunting $1 each at local bookshop ~ 'Tips from your Nana' is full of quirky hints on preserving food, making your own cleaning products + salves, through to the general advice your Nan used to dish out. 'Grow Harvest Cook' is a great source of inspo for getting stuff from garden to plate, pretty excited to read through that.....and 'Produce to Platter' is purely for scoping out new backyard places in Victoria's High Country x Some of my best recipes have come from second hand books 📚🧡 & yes I'm a confessed lover of everything upcycled. So next time you spot an old preserving book, stop + flick through. It may just hold that magic recipe you can put in a jar. ✨ 🌱

Sunday night the house smells of Vanilla & Pears ~ simple sugar syrup fancied up with Split Vanilla Pod, 2 Star Anise + Cinnamon Stick. The leftover syrup is too good not to keep, that's what's in the jug, I also got a 500ml jar of it which I water-bathed too - 3x 1Litre Jars of pears all up....and how pretty do they look ✨will be great eating in a few months ~ tried & tested in the GoodLife kitchen x . Last nights effort ~Kumquat/Orange Marmalade. I like my marmalade on the tarter side, not too sweet, so this one takes a little longer to cook out to the right consistency. Citrus season is in full swing so now is the time to get a few jars onto the shelf. If you don't have this tiny little citrus then I would adapt the recipe with just oranges or a mix of other citrus, you could even add a cinnamon stick to the cook. Here's the Recipe below for anyone who wants to have a go ~Happy Friday!
Daniels Kumquat & Orange Marmalade🍊
2 to 3 Oranges + enough Kumquats to make 1kg sliced fruit
juice & zest of 1 large Lemon
5 cups Water
White Sugar, 1 cup to every 2 cups fruit (I used 3 ½)
good pinch Cayenne + 1 Star Anise
Thinly slice all the fruit, flicking out the pips (keep them for a muslin bag, that is your natural pectin). Cover the fruit with the water & leave overnight. Next day into a big pot with the lemon, sugar, cayenne, star anise & muslin bag. Bring up slowly then drop to a hard simmer, taste early & sweeten now if you like (kumquat is tart). Lift the star anise after 15 mins. Cook around 45 mins to a jam consistency, remove muslin bag then quick buzz with the stick mixer if you fancy. Check setting point on a cold plate, it should crinkle. Into hot jars, wipe the rims, seal with your dome & band, cool on a board till they pop. (makes 4 & a half GoodLife 250ml jars)

🍊 Seasonal citrus is calling! 🍊I've been gifted a small batch of kumquats all the way from NSW — and I've never worked with these little beauties before! The plan? A kumquat & orange marmalade. I've been picking out as many pips as I can (they're bitter little things but keep them aside for using to up your pectin in the mix), stage one— the soaking, begins today. Apparently you can eat kumquats whole, skin and all, so of course I gave it a go - nope not a fan. But that's exactly why they're brilliant for marmalade: you still get all that goodness with nearly twice the fibre of an orange + a big hit of vitamin C ~ just in a far more delicious form.
I've made marmalade from frozen oranges before & this is my very last precious jar, so it's the perfect time of year to top up the pantry. Tomorrow's the big day when the marmalade actually happens — stay tuned! In the meantime, tell me: who's cooked with this cheeky little citrus fruit before?
