Growing wasabi is quite labour intensive. It's a lot of work to go from that to this, on all of them, then repeat it all again in a month or two for the entire crop production cycle ...which can be 2 or 3 years, to have a premium wasabi rhizome ready to sell

Just under 500g Mazuma #1 in this lot, after over 2 years growing ...and it is very likely only 10% have reached this size, seriously. They are very slow growing to say the least.😏

It's amazing for how long wasabi rhizome can be stored in your fridge. If you keep it in a zip lock bag, but dry and with petioles removed so it doesn't rot, it will keep for several months, keeping it's flavour too. When you want to use it, take a sharp knife and carefully remove the outer surface of the part that you want to grate ...but remember most of the wasabi flavour is near the outside of the rhizome so do go ever so easy when you do this.

This is what 544g Mikado wasabi rhizome looks like before and after the clean up (160 to 200g sizes here). Premium quality restaurant grade, fully matured all the way to the top ...minimal leaf removal at harvest time!
