Remedy Kitchen’s Oaty Tart Base, the Remedy Lemony Way! (Go on, try saying that five times fast.)
All tarts aren’t created equal! This tasty tart shell is made with Remedy Kitchen Milled Oat Porridge, making it a delicious option when you’re short on time or after something a little different. I may not be Gareth Whitton from Tarts Anon, but when you want a tart ASAP, this one’s a winner!
OAT TART CASE
1½ cups Remedy Kitchen Milled Oat Porridge
¼ cup desiccated coconut
½ cup almond butter
3 tbsp rice syrup or maple syrup
3 tbsp coconut oil
¼ tsp salt
LEMON BUTTER/CURD FILLING
120g lemon juice
270g caster sugar
240g butter
6 eggs
METHOD
Heat oven to 170°C and lightly grease a 25cm fluted tart tin (3.5cm deep), making sure the grooves are well greased.
Mix all tart-case ingredients in a bowl. If the mixture is too crumbly, add a little more coconut oil. Nut butters vary in consistency, especially at the bottom of the jar! Press into the tin and bake for 10–15 minutes.
For the filling, I used a Thermomix lemon butter recipe, tripling the quantities for a generous filling. You can also make lemon butter/curd on the stovetop. Cook gently over low to medium-low heat, stirring constantly for around 8–15 minutes, until thickened. Don’t let it boil, or the eggs may scramble.
Pour the filling into the tart shell, smooth the top and refrigerate until set. Chilling overnight helps it firm up for cleaner slices.
Dust with icing sugar before serving, or decorate your way. Enjoy! x
